Breakfast Lab
Overview:

For this assignment, you will be playing the role of a dietician. Your client is an adolescent
around the age of 14-17 years old who suffers from a gluten intolerance. The client has a
Body Mass Index that is approaching obese, and his parents recognize that their family as
a whole has not been practicing a healthy diet. They are not able to fully teach their child
about proper nutrition, so it is important that you are able to educate both the child and
his parents so they have the information needed for him to develop a healthier diet and
lifestyle.
Assignment:
Your first assignment with the client and his parents is to help them with the
first meal of the day, breakfast. Your client rarely eats breakfast because there
aren’t many gluten-free breakfast options. When he does eat breakfast he’s
usually eating foods that are ones he should be choosing less of. You will
educate your client on the importance of breakfast, what breakfast foods are
good choices, and which should be avoided. An important part of being a
dietician is not only to provide recommendations, but explain the why as well.

you are explaining in a way that is appropriate and easy for a child of this age to understand. Research by reading
credible articles online or in magazines (should be written by a dietician, chef, nutritionist, doctor, etc.). Anyone can
publish something online, so make sure your source has the credentials to be giving the advice (7 points)

Breakfast is often called ‘the most important meal of the day’, and for good reason. As the name suggests, breakfast breaks
the overnight fasting period. It replenishes your supply of glucose to boost your energy levels and alertness, while also
providing other essential nutrients required for good health. Many studies have shown the health benefits of eating
breakfast. It improves your energy levels and ability to concentrate in the short term, and can help with better weight
management, reduced risk of type 2 diabetes and heart disease in the long term.Despite the benefits of breakfast for your
health and wellbeing, many people often skip it, for a variety of reasons. The good news is there are plenty of ways to make
it easier to fit breakfast into your day

vital for normal growth and development. Scheduling a visit with one of our Registered Dietitian Nutritionists can set you or your child
on the right path to developing healthy habits and creating a proper nutrition plan.

explain why this would be a good choice/why you suggested it. Be sure to list specific foods (blueberries vs. “fruit”) and
connect the foods to the nutrients/health benefits it provides (10 points, 1 each)

1st Gluten free breakfast


Into large bowl, measure cereal; set aside.
In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir.
Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring
until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in
refrigerator.
The reason why I picked that was because Its a perfect filling snack to make and very light.
2nd Gluten free meal Best-Ever Gluten-Free Pasta

n a large bowl, whisk together gluten-free flour, xanthan gum, and salt.
Make a large well in the center of your flour mixture and add eggs. Using a fork, beat eggs until mixed, then slowly integrate flour into eggs until no dry flour is left
and a ball of dough has formed. (You may have to switch from a fork to your hands near the end of the mixing process.)
Turn dough out onto a lightly floured surface and knead until smooth, 2 to 3 minutes.
Cut dough into quarters and wrap all but one in plastic wrap. On a lightly floured surface, roll uncovered dough into a long rectangle about 1/4” thick. Set pasta
maker to widest setting and pass the rolled out dough through 2 times. Fold the short ends of the dough to meet in the center of the rectangle, then fold in half so
that the dough is in quarters. Roll out again to the dough is 1/4” thick, then pass through pasta maker 2 more times.
Adjust pasta maker to be 1 degree more narrow and repeat process. Continue rolling, folding, and adjusting until desired thickness is reached. Dough should be
slightly translucent.
Place rolled out dough onto a lightly floured surface and dust with more flour. Repeat process with remaining dough quarters.
Adjust pasta maker to desired width of noodles and feed dough through machine. Divide noodles into equally sized portions and curl into nests. Place on a
parchment lined baking sheet and cover with a clean kitchen towel until ready to cook.
To cook: bring a large pot of salted water to a boil and add pasta. Boil, stirring gently with a wooden spoon, until tender, 2 to 3 minutes.
Drain and serve with your favorite pasta sauce.

You will create a healthy, gluten-free breakfast for your client. Make it fun and creative-this will be
included in your digital portfolio. You may create your own breakfast recipe or use one from the internet.

● Put 1 ounce butter in pan, let it melt and stir around pan
● One Cheddar cheese ● Get 2 eggs and break it in a bowl and stir
● Butter one ounce ● When stirred, add cheese and break it into little pieces
● Put scramble eggs into the pan and stir it around
● One Apple ● Keep stirring for 3 mins, then let it sit for 1 min
● Then cut your apple in 8ths
● Then take your eggs and put it center of your plate,then
add your apples around your eggs and you got yourself
a Gluten free breakfast.

This Breakfast is a very healthy meal to have in the
morning because it has eggs and a very good fruit.

This is very easy t make just following a couple of steps.


Step one
Get your medium pan and put heat on
medium. Then add your butter and let it
melt, stir around

Grab a bowl, break your eggs into the bowl

After scrambling your 2 eggs, add
cheddar cheese and break it into little
pieces and add with the eggs

Then after your taste a little, if
good add it into a plate, in the
center

Grab an apple and clean it, then cut
apple into 8ths and put all pieces of
around your eggs
Finished Product: Be sure to make it look appealing to a teenager!
After putting eggs on to your plate, add
the apples around your eggs

And there you have it, a healthy Gluten


free breakfast.
