CHICKEN KORMA

SPICES
1 cinnamon stick
2-3 cardamom pods
1 tbsp. whole black pepper
1 tbsp. cloves
2 tbsp. fennel seeds
1-2 bay leaves

6-12 skinless boneless chicken thighs

1.5 large onions


1-2 cups plain yogurt
2-3 Serrano peppers
6 large cloves garlic, diced
2 tbsp. grated or diced fresh ginger

In a blender puree
1 large onion
6 cloves garlic
1 large cube of ginger
¼ cup cashews
3-4 large pieces coconut
2 Serrano peppers
¼ cup fresh coriander leaves

In a large pan melt 2 tbsp. butter with 1-2 tbsp. olive oil. When melted add the
spices

Sauté spices in butter but do not burn!

Add onion, garlic mixture and sauté until onions are brown.
Add chicken and
2-3 tbsp turmeric,
2 tbsp. cayenne,
1 tbsp. garam masala,
1 tbsp. curry powder.

Turn the chicken pieces so that the powders are blended well into the chicken.
