Main Dish
2 whole eggs
1 tablespoon sesame oil
2 tablespoons sliced green onions
Instructions:
Take your diced chicken breast and marinate in mixture of half of your soy sauce, sriracha,
brown sugar or honey, garlic, ginger, half of the sesame oil.
Let sit while everything else is prepped (10-15 mins)
Thinly slice your head of green cabbage by cutting in half, removing the core, and cutting thinly.
Thinly slice your white onion.
Scramble your eggs up in a nonstick pan and set aside until the end.
Heat the other half of the sesame oil in a large saute pan. With heat on high, saute your chicken
and allow to cook thoroughly until the liquid has reduced down by half and has thickened. This
will be your sauce for the dish. Place on a plate and set aside with eggs for later.
Heat the same pan back up on the stove and add a little olive oil, get nice and hot!
Add onions and cook until translucent, allowing to caramelize slightly. Add diced/shredded
carrots and saute until tender.
Add shredded cabbage and remaining soy sauce. The pan will be very full but WILL cook down.
Keep stirring the cabbage and onion mixture until cabbage is nice and tender. Check for
seasoning, you may want to add more soy, sriracha, garlic, ginger etc at this point!.
Add in your cooked chicken and scrambled eggs, juices and liquid included and stir together.
Remove from heat and garnish with some fresh sliced scallions.
