According to the different sites in the internet, it was said that it doesn’t do much
difference if you use the shiny or dull side in cooking. However, in my opinion, the dull side of
the aluminum foil (aluminum oxide Al2O3) should be exposed to heat because it would be the
one that can serve as the sacrificial anode that can somehow protect the shiny side (composed
of aluminum and its alloys) . This is because in terms of sacrificial anodes, it was mentioned that
the more active metal and has low resistance is the one used to protect the less active metal.
Since aluminum oxide would react faster than aluminum and its alloys, it will be the one to be
used as the protective layer. On the other hand, if the opposite would be done and the shiny
side is exposed, there is a chance that the once it oxidizes, oxidation will easily continue to the
dull side and thus cause the aluminum foil to degrade faster.
