The food system summaries all the process, from production of the raw material to
consumption. This is influenced by many factors such as policy, research, market, education,
etc. The system is composed of subsystems (Pre production, farming and indigenous harvest
system, make supply chain and consumption), these are related to the waste management which
is a key factor to recover and capture energy, composing material and more process to reduce
waste food and environmental pollution. The Food systems thinking views the behaviour of
each subsystems as an interplay subsystems than just a simple chain of process of cause-effect.
All of these activities of production, marketing and consumption requires different perspectives,
meaning an applying of technological innovations with the focus on increase productivity,
profiability and impacts of the marketing and enviorment. The first processes, include the inputs
for agriculture and farming practices to obtain the raw material. Then farmers have two options
to introduce their products to the market: Direct market supply chain and conventional supply
chain. The first means that farmers manage their own way to introduce their products to market,
the second is an agreement between producers and companies to facilitate market introduction
through processing and distribution. Finally, the product reaches the consumer through different
means such as restaurants, institutions, among others.
I think one solution could be the production of healthy food, although most of the food system
is defined by the costumer ‘s demand, therefore we must start to change our food culture that is
the key to increase the production of healthy products such as quinoa, wheat, among others,
with the feedback of economics, social and enviormental impacts). Also, we have to think in
sustainable agriculture to mitigate greenhouse emissions, maintaining or increasing the
production and reducing operating costs.

How would you apply what you learn from the training program in the United States
towards a project, initiative or business in Peru?

When the program ends i could make an arrangement with the research center where
i work to make research workshops where we could discuss the methods and
process about sustainable agriculture and how we could apply with the farmers and
enterprises

What are your ideal for a regional food system in Peru? 

My idea of a regional food system is that authorities could help the producers to increase their
production and giving them the tools to reduce the costs process with technology equipments.
However, we must not only give them new equipment, but also train farmers how to use them
trough continues talks the benefits they can have. Also, the producers and companies should
could work together, mainly to help farmers to get ahead and increase economically. Finally,
we should start thinking about health products to promote the varieties of products we have
in our country than others such as fast food. All this process must be do with an idea of circular
economy, meaning to reduce to zero the waste food and pollution.
