Breakfast BnB, a business which will be located in the Pearson Parking lot off Lovett

Avenue in Newark, Delaware, is a breakfast truck that will cater to the fast-paced life of college

students. Being a business operated out of a food truck will allow Breakfast BnB to use minimal

resources while still achieving a product that will satisfy customers. Breakfast BnB will strive to

fulfill their mission statement, which is: “Our goal at Breakfast BnB is to match the fast-paced

lifestyle of a college town, while providing high-quality, moderately priced breakfast foods to

kickstart your morning. We aim to create a positive, nurturing environment for our customers,

employees, and the planet, by fostering the use of sustainable products and emphasizing

customer and employee satisfaction.”

Breakfast BnB’s menu will offer breakfast sandwiches on bagels, breakfast burritos,

bagels with cream cheese, and various beverages, including coffee. The basic breakfast sandwich

with bacon, egg, cheese, and ketchup on a bagel will only cost $0.90 to produce. Customers will

be able to order their food in-person at the truck or online through Breakfast BnB’s website.

Breakfast BnB will be technologically savvy and use Squarespace and an iPad system for

payment. Both credit and cash payments will be accepted.

In order to draw in the attention of potential customers, Breakfast BnB's food truck will

be bright orange with a large Breakfast BnB logo on the side. It will feature a sliding glass

service window, an overhang, and a framed menu on the outside of the truck. The inside of the

truck will contain a stove top, a refrigerator, a freezer, an exhaust hood, a toaster, a bagel slicer, a

sink and water tank, and storage cabinets. The kitchen portion of the truck will be powered by a

generator.

The campus of the University of Delaware will be chosen as Breakfast BnB’s location

due to the high volume of college students in the area. The mild Newark climate and the
opportune location of Pearson parking lot will ensure there is an abundance of foot traffic near

the truck at its busiest operating hours. Since studies have found that convenience in a top

priority for college students when making food choices, Breakfast BnB will work to emphasize

the easily accessible, affordable, delicious food it offers. College students will be an ideal target

population for Breakfast BnB due to their reputations of being large discretionary spenders.

Breakfast BnB is planned to operate during prime breakfast hours and will be open from

7:00 am – 2:00 pm Monday through Friday, 9:00 am – 1:00 pm on Saturday, and will be closed

on Sundays. Breakfast BnB will employ a financial advisor, a food purchaser, two general

managers, 5-6 servers, and three grill cooks. All employees will be under the supervision of the

CEO. Breakfast BnB estimates a productivity ratio of 4.2 sales per labor hour. Breakfast BnB

will continuously train their employees on topics including customer service, food safety, and

others. Various policies and procedures will be in place to ensure employee organization and

cooperation, such as policies for record keeping and requesting leave or time off.

In order to remain a competitive business in today’s society, Breakfast BnB will

implement many marketing strategies, such as friendly customer service, social media

campaigns, setting competitive prices, and exploring partnerships with other businesses.

Breakfast BnB will use promotional materials in order to get ahead of the competition. Wix will

be used in order to create a website and Instagram, Twitter, and Facebook accounts will be

utilized to boost social media presence. Flyers will be placed in busy parts of the University’s

campus and along Main Street, and wearable merchandise will be sold.

information and costs to include.

previous assignments that were needed for this assignment, such as the
productivity ratio, and helped turn our outline into paragraph form. I also assisted
in the calculation of the price that we would need to sell our product for.
 New Area of Business Management
o An area of business management where I learned something new was from the
Orientation Procedure, Training Plan, and Lesson Plan of One Employee
Assignment. Before working on this section, I was unaware of how much
information went into an agenda for an orientation procedure and of all the
documents that had to be signed by a new employee. I will use this information in
the future if I am ever in a job position that requires me to create an orientation
procedure, a training plan, or a lesson plan. I will also use the information when I
am applying to jobs or other opportunities. I now have more respect for all of the
time that goes into planning orientation agendas and the importance of taking
them seriously and completing the entire orientation.
 Additional Group Rule
o An additional rule that I feel would have been helpful to our group would be to set
aside an hour of time each week in order to meet as a group outside of class and
work on assignments. Our group usually had conflicting schedules when it came
to last minute outside of class meetings, so by coming up with a consistent
meeting time for each week at the beginning of the semester would make it easier
for us to meet outside of class as a group to complete assignments. An example of
this would be if the group decided that every Tuesday at 5:00 pm we would set
aside an hour for a group meeting if needed.
