Oven - 200c / gas 6

MAKE BASE
300g shortcrust pasty into dish and prick base
Chill for 20 mins

baking paper on top of pastry case, fill with rice, bake for 15 mins
remove rice/paper
bake for 15 mins until golden/crisp
leave to cool

OR

layers of 4 x filo sheets for 6-7 mins (oil in-between)


leave to cool

OR

275g puff pastry

FILLINGS

Toms / Veg - drizzle with oil, sugar and vinegar and thyme
Roast for 20 mins
OR
450g mixed marinated veg (aubergine, peppers, sun-dried toms) + mixed kalamata
olives tossed in zest and juice of 1/2 lemon, pepper.

150g cheese (goats/ricotta) + 200g low-fat creme fraiche - mix in bowl, season
OR
125g ricotta + 1 tbsp basil pesto + salt & pepper
spoon in case
OR
125g mozzarella balls (torn)

FILL
veg on top + juice, thyme or basil & pine nuts
