BBQ Chicken Nachos – C

avocado slices and rice

Prep To Assemble

1/2 bunch cilantro Chop cilantro and add to medium bowl with lid.
15 oz pinto beans Drain beans and add to cilantro in bowl along with remaining ingredients. Mix
4 C cooked shredded chicken from deli rotisserie well.
1 C BBQ sauce
To Cook
On Cooking Day
Line large baking sheet with foil and spray with non stick spray.
18 oz tortilla chips
Pour chips onto baking sheet and top evenly with chicken mixture and
2 C shredded cheddar jack cheese
shredded cheese.
1 C sour cream optional
1/2 C feta cheese optional Bake in a 350 degree oven for 15-20 minutes or until heated through and
cheese is melted.
2 avocados
2 bag steamers rice spanish or Mexican Cook rice according to package directions. Serve nachos with feta cheese,
sour cream, avocado and jalapeño slices.
1/2 C jarred jalapeño slices optional
