Balsamic Vinaigrette
1/4 cup (60 ml) extra virgin or virgin olive oil
1 tablespoon balsamic vinegar
1 tablespoon finely chopped fresh basil
1/2 teaspoon salt
freshly ground black pepper, to taste
Makes about 1/4 cup (60 ml)
Use the best balsamic vinegar and olive oil that you can afford for
this dressing.
In a small, nonreactive bowl, whisk together all the ingredients until
well blended. Use immediately.

Surprisingly easy to make, flavored oils pack a powerful
flavor punch in salads. They make fabulous gifts, too, but
make them in small quantities because they are perishable.
The best choices for flavorings are lower-moisture herbs,
such as rosemary, thyme or sage, or spices such as
coriander seeds or chiles.
+ To make a flavored oil, all you need are several sprigs of
fresh herbs or whole spices and enough olive oil to fill the
bottles.
11 Spread the herbs or spices on a clean work surface. Using a
rolling pin, gently press down on the herbs or spices to lightly
bruise them.
