• Proper handling and transportation of raw
materials is essential to produce good quality end
product
• If raw material is contaminated before being
processed or preserved greater efforts will be
required in later stages
• For that reason, as soon as the raw material is
harvested, animal slaughtered or fish is caught, it
has to be given adequate treatment
• Proper containerization is essential for these
materials
 Selection of container
• Should be free from contaminants
• Don’t use that container for food which is
already used for non food items
• Size and type of container should be according
to the type of product
• About 40% fruits and vegetables are lost as a
result of improper containerization and
handling
