POTATO SALAD

MOM’S

8 Potatoes, non-mealy (Yukon Gold), cooked, cooled, and diced


1 cup celery, chopped, including a couple tender leaves
4 – 5 hard-boiled eggs, chopped
1 medium onion, chopped
parsley, chopped, to taste

DRESSING:
In kettle or double boiler, put:

2 eggs, beaten
a little less than 1/2 cup sugar
1/2 tsp dry mustard
1 cup cream or Half & Half
a good 3-finger pinch each of salt and pepper
vinegar to taste (about 3 Tbs)

Cook on low until thickened and dress potato mixture.
