KOLHAPURI MASALA POWDER


This fiery blend of spices is from Kolhapur in Maharashtra, India. It 5 from 1 vote
provides authentic touch to Kolhapuri style dishes.

SERVINGS - 1 Cup

1 Cup = 240 ML

Ingredients
10 dried red chillies
2 tbsp sesame seeds
1 tbsp coriander seeds
1 tbsp cumin seeds
2 Tsp fennel seeds
1 Tsp black peppercorns
1 Tsp fenugreek seeds
6 cloves
1 Tbsp black mustard seeds
50 g unsweetened desiccated coconut
½ Tsp ground nutmeg
1 Tsp red chilli powder

Instructions
1. Heat a frying pan over a low to medium heat and dry-roast dry red chillies. Red chillies will
become dark in color; remove from the pan and take in the bowl. Now roast coconut for few
minutes or until it changes color to light brown, remove from the heat and take in the bowl with
chillies.
2. Now except nutmeg and chilli powder, take all the spices on the pan and roast on medium flame
for few minutes until they are fragrant.
3. Remove from the pan and take in the same bowl with chillies and coconut, let it cool completely.
Now add nutmeg and red chilli powder and grind these spices into fine powder.

4. Store into air tight container and keep in a cool and dark place. If want to store for longer period
of time keep airtight container in the fridge or freezer.
