Personally, I think most people who move to Denver end up falling
in love with its breathtaking scenery and alluring culture. I know
we did. With an influx of almost 100,000 transplants in the last
seven years, it doesn’t surprise me that there’s just something about
our beautiful state that keeps Colorado on top.
For starters, Denver boasts a strong econo-
my, evident in its shiny, mile-high façade that
takes your breath away—both literally and
figuratively. From its eclectic shopping streets
and historic dining districts to its spirited arts
and music scene, our city is one of the coun-
try’s most sought-after destinations. Now with
a population of more than three million, the
city is scrambling to develop the infrastruc-
ture, transit, and housing needed to keep up
with the demand. But this is all good news.

125 years of care


This year, the Denver Zoo celebrates 125 years of education, conservation, and love. The arrival of the pandemic last year cata-
pulted the 80-acre campus, home to over 3,000 animals, into the red zone. The gates, once unfolded to the public, were tightly
shut for three months, and zoo staff faced a unique challenge: feeding its animals amidst losing 70% of its revenue. Funds were
redirected, and the animals never missed a meal—a great deal thanks to its community. “We saw a lot of support,” says Denver
Zoo Director of Communications Jake Kubié. “Our 125th celebration is about love. It’s about the love that we have for our animals
and our community, and the love that we’re fortunate that so much of the community has for us.” Support the Denver Zoo and

“My dad is a carpenter, so I grew up building
things with him. Honestly, I got more into it
once I had my shop. I have the space to do it
here and I have my woodshop underneath in
the basement. So, when people aren’t here,
I’m in the woodshop making sawdust and
creating cool things for the plants.”

Describe your creative process.


“I don’t like to make the exact same pieces—
that’s just the artist in me. I don’t want to be
a factory. The reclaimed wood that I’m using
has so much character as well that I like to
do different tones and designs to switch it up
for people so that they truly have something
unique in their home. Sometimes I sit on a

Benjamin. A Bite of Boulder keeps you connected to the foothills’ dining community, featuring highlights on
wine, cheese, and spices. Its pages also hold kitchen tips, explorations into the future of our food system, and
featured stories from local industry personalities: “When Chef Roy Benningfield [of SALT] sent me this Butter-
nut Squash Soup recipe, I was very excited,” says Benjamin. “He shared that it was a guest-favorite recipe, and
an obviously soul-warming dish.” Fifty percent of the book’s proceeds go toward participating restaurants in

Mac ‘n’ Queso


Yield: 1 large family-style serving

INGREDIENTS
8 oz. ground chorizo
12 shrimp, uncooked
1 c. large pasta shells (dry)
5 oz. queso
⅓ c. shredded Mexican cheese
2 Tbsp sour cream
½ c. Pico de Gallo
½ c. crispy tortilla strips
1 tsp black pepper
Fresh cilantro to garnish

DIRECTIONS
In a pan, cook chorizo over
medium heat for about 5 to 7
minutes or until crispy. Remove
the chorizo from the pan without
draining the oil; then, add shrimp
to the pan. Cook for 2 to 3 min-
utes, then flip the shrimp. Remove
shrimp once it’s pink and curled.
In a large pot, bring water to a
boil; cook large pasta shells until
al dente. Drain the water and add
the pasta to a saucepan. In the
saucepan, combine the shells with
queso, Mexican cheese blend, and
black pepper. Sauté on low heat
for approximately 2 to 3 minutes
until the shredded cheese is melt-
ed. Pour mixture into a shallow
bowl and drizzle with sour cream.
Top with Pico de Gallo, crispy
tortilla strips (or crushed tortilla
chips), and freshly chopped ci-
lantro. Add chorizo and shrimp,
then serve.

OFew shopping corridors in the metro area reflect Colorado’s rich, multifaceted life-
style moreso than downtown Denver’s Larimer Square. Designated the city’s first his-
toric district in 1971, the block between 14th and 15th streets adjacent to Lower Down-
town (LoDo) is lined with buildings from the 1880s and strung with twinkling overhead
lights that evoke an enchanted vibe when the sun dips low. The block was
purchased from longtime owner Jeff Hermanson in December 2020
by real estate investment firm Asana Partners, which is committed
to evolving and providing new experiences at Larimer Square,
while also “maintaining its irreplaceable historic character.”
Indeed, says Grace Buttorff, owner of Hailee Grace boutique,
“It feels like the city started here, and it’s very much a neighbor-
hood atmosphere. They curated it all so we have our own niches
and we’re complementing each other instead of competing.” And,

The quaint Mariposa Garden House is the perfect example of making the most of small spaces. The project’s renovation was
recently recognized by the American Institute of Architects (AIA) with Awards of Distinction and Excellence in the category “under
15,000 square feet.” According to the renovation’s architect Renée del Gaudio, AIA, the project’s deep connections to the landscape,
luminous spaces, and earthy materials create a maximum impact with a minimal footprint. “The Mariposa Garden House is built on top
of an existing concrete foundation from the 1940s. The reuse of this existing foundation was seen not as a constraint, but an opportu-
nity; the project succeeds in its restrained approach to materials, energy, and size,” says del Gaudio. The AIA judges specifically noted
the home’s beautiful addition which, despite being a small space, creates multiple usable spaces and feels upgraded in every sense of
the word—not to mention the great views from inside the kitchen.

and active. “Pre-COVID, I never wanted to run back and forth between my home
and office to change for evening events. I’d leave my house dressed for work, but
I’d keep a dressy third piece in my office for a last-minute evening out. I still
want to offer my customers a way to dress and go, even if it’s only grocery shop-
ping or errands or picking up take-out or going to the hairdresser in comfort

THE DESIGN PROCESS


Selzer’s design process starts with feeling, function, and location. Three things she
asks herself are ‘What feeling am I trying to create? What functions do I need to
take into consideration? What makes the location unique, and how do we respond
appropriately to the environment?’ She explains that when those three elements are

“We work with real homeowners who earn money on each
rental of their home. On the flip side, we also work with
photographers, production agencies, and brands to help them
find the perfect location for their photo and film shoots. Our
spaces are easy to reserve, and our Reservation Managers help
coordinate all the details in between to make sure things run
smoothly. Our unique, styled homes bring creative productions
like catalog shoots, commercials, and marketing campaign
productions to life. We are well-loved by brands like Starbucks,
Hallmark, L’Oréal, and more that use our styled homes to
bring their creative productions to life.”
