Allergen Control Program

Definition of allergens:
Substances that cause an allergic reaction in some people.

The different types of allergens prohibited from the production of chocolate at AMCHO:
Cereals containing gluten (Wheat, rye, barley, oats) and products made from these grains
Fish and products made from fish
Shellfish and products made from shellfish
Eggs and products made from eggs
Soy and products made from soy
Milk and milk-based products (including lactose)
Tree Nuts and products made from tree nuts
Peanuts and products made from peanuts

Preventive measures against allergens:


 No access of these allergens into the factory. Firm ban (internal regulations).

 Full cleaning of production machines and equipment after production of so called


« conventional chocolates » before starting the next production.

 Staff training and awareness on allergens and risks of contamination.

 The main suppliers are certified "ORGANIC"

 Conventional inputs are not mixed with « Organic » inputs (sectorization of products by
poster and marking on the ground)

 Postings for visitors and mandatory awareness for each visitor.


Corrective measures in the event of an occurrence:

 Stop production and find the source of contamination. Production can continue once the
damaged object is isolated and removed from the production area.
 Isolation of contaminated products by placing them in external storage (outside of the
factory).
 Destruction or rejection of contaminated products.
