CHEESY CURLS CUPCAKES

INGREDIENTS
Unsalted butter 180g
Cream cheese 114g
White sugar 300g
Eggs 3pcs
All purpose flour 210g
Baking soda 5g
Salt 3g

FROSTING
Butter 200g
Cream cheese 150g
Powdered sugar 100g
Cheddar cheese 190g

PROCEDURE
1. Preheat oven to 325 degrees F. Line a standard muffin tin with paper cupcake liners.
2. With an electric mixer, beat butter and cream cheese until smooth.
3. Add in sugar, beat until light and fluffy for about 8-10 minutes.
4. Add eggs, two at a time, beating well after each addition.
5. Adjust speed to slow, and then add dry ingredients in 2-3 batches, until just combined.
6. Fill the cupcake liners 1/3 full.
7. Bake for 20 minutes or until golden brown and if the toothpick inserted in the center
comes out almost clean.
8. Cool completely before frosting.

For the FROSTING:


1. Beat butter on a medium speed until smooth.
2. Add cream cheese, beat until well blended.
3. Gradually increase speed to a high and continue beating until light and fluffy, scraping
down the sides and bottom of the bowl as necessary with rubber spatula.
4. Gradually add powdered sugar until well combined. Add additional powdered sugar until
desired consistency for spreading and level of sweetness is reached.
5. Spread on top of each cupcake the top with grated cheddar cheese.
