#1 KASEROLA OVEN – IMPROVISED OVEN USING LARGE POT

Photo credits to Mayette D. Ocampo. Brownies Baked in an Improvised Oven for 30
minutes using low fire.

You can use an old thick large pot or kaserola and place a wire rack (parilya or
patungan na bakal or stainless) inside the pot. Do not use a “stainless pot” because it
burns easily. If you use low heat, there is nothing to worry because it will not burn pot.

Note: There is no need to add water. Just place the wire rack (parilya or patungan na
bakal) inside the pot and place the baking pan on top of it. The wire rack is not on a
standing position but inverted. It is just a few cm away from the bottom of the pot.
Please make sure your baking pan is heat resistant or you may use Lanera. Do not use
plastic pans.

Preheat the pot for 5 minutes before placing the brownies inside the pot. Use low fire
and be patient. Yes patience is important. (Use of medium heat can burn/toast your
brownies because the pan is near the bottom of the pot.).

Make sure to cover the pot so the heat is concentrated on your pan while you are
baking it. Let it bake for about 30 minutes or until toothpick inserted in the center of
brownies comes out clean.

Use a large kawali or wok, fill atleast ¼ of the wok with soil or sand. Let it heat over
medium-low heat. When the sand starts smoking, place the wire rack (parilya) on the
sand. Cover the kawali or wok and set the fire to medium-low heat. Use medium fire for
20 minutes and set it to low for 40 minutes. Total baking time is 1 hour.

According to Lalah Merced:

“Lagyan po ng buhangin yung kawali painitin po muna. Pag nakita umuusok usok na
lagyan po nung alambre na lalagyan ng kawali yung bilog tapos ilagay na yung mixture
takpan po med to low heat po pero nung 20 mins na pinahinaan ko na po. Umabot
isang oras kasi mahina po apoy ko kasi naalangan ako baka masunog. Tinusok ko po
ng toothpick para makita if luto na.”

instructions.

#6 LARGE POT OVEN WITH STONES

You can use a large old pot and add some gravel or stones, then add a small pot in the
center to serve as a pedestal for your baking pan. Do the same process in baking.
Preheat the pot until very hot, then carefully add your baking pan in the center. Here
you can easily adjust medium to low heat because the pan is elevated. Your baking will
purely rely on air heat inside the pot.
