“La Cazotte” is a public agricultural training institution, which opened in 1970 under the authority
of the French department of Agriculture. It is located in Saint-Affrique (8000 inhabitants), in the
Occitania region, in the south of the department of Aveyron, an area famous for its Roquefort
cheese, the Millau viaduct, the UNESCO Templar Knights settlements on the Larzac and its regional
natural park.

Our school is divided into 5 units:

THE FARMING HIGH SCHOOL


 about 400 students aged 13 to 20
 37 teachers
 5 specialties (sheep breeding / horse breeding / horse riding / agronomic technologies / animal
production)
 a 390-bed boarding school (one of the largest in the South of France)

THE TRAINING CENTRE FOR ADULTS


 110 adult trainees
 17 trainers
 6 specialties (sheep breeding / horse breeding / horse riding / organic farming / market gardening
/ permaculture)

THE APPRENTICESHIP CENTRE


 200 apprentices aged 15 to 29
 11 trainers
 6 specialties (general farming / horse care / landscaping / commerce / road transport / electricity)

“PASTORALIA”
 an interactive discovery centre on sheep farming and the Roquefort sector

THE FARM
 educational and experimental farm
 4,5 workers
 140 ha (346 acres) + 100 ha (247 acres) for organic crops
 600 Lacaune dairy ewes (Roquefort PDO)
 2 organic flocks (80 Lacaune sheep for meat + 20 Aubrac heifers)
 3 New Forest brood mares (about 20 horses in development)
 dressage workshop (30 young horses a year)
