Just found this on another board, and it sounded so good that I decided to post it

here before heading to the store for sourdough rolls! I'm thinking that a little
broccoli would be a tasty addition, but that will have to wait until the next time
I make them.

8 sourdough buns (rolls)

3 chicken breasts
2 garlic cloves, diced
1 pound cubed cheddar cheese
1 onion, diced
1 stick butter
2 cups cooked sliced mushrooms
1 can artichoke hearts

Cut the tops off of each bun,set aside to use later. Pull the bread out of the
inside, leaving a bread shell.
Melt the butter in a skillet, dice the chicken and cook until brown (I don't think
she really meant brown, but probably just "done"). Remove and set aside.
Add the bread you just removed from the bun and heat until brown and toasty. Add
the garlic, onions, artichokes, mushrooms, chicken and the cubed cheese, remove
from heat.
Spoon mixture into bread shells, recap with the bread tops.
Put buns onto a cookie sheet, and heat through until cheese is melted.
