KUE LAPIS PEPE

Ingridients :
385 gr Tapioka Flour
15 gr Hungkwe Flour
8 gr Salt
430 gr Sugar
1000 ml Coconut Milk
3 leaves Pandan
1 stalk Lemongrass
5 leaves Lime

Essence/Paste :
1 tsp Vanilla Essence
¼ tsp Pandan Paste
¼ tsp Red Food Coloring
¼ tsp White Food Coloring

How To Make :
1. Boil coconut milk with pandan leaves, lemongrass, lime leaves in sauce pan. Strain,
cooling until room temperature
2. Take 200 ml of coconut milk then heat it, after it is warm dissolve it with sugar.
TIPS : Dissolve the sugar first, to speed up the procces and so that the sugar content
dissolves in the flour.
3. In bowl stir together the tapioka flour, hungkwe flour, and salt until blended.
4. Put the coconut milk into the same bowl its gradually together with the sugar water that
has been dissolved with coconut milk, stir until mix well.
5. Add the coconut milk again until finish while stirring. Then, put the Vanilla Essence into
the bowl.
6. After mixed well, strain the liquid mixture.
TIPS : Strain the liquid mixture to avoid undissolved mixture contained in coconut milk.
7. Weight the liquid mixture, then divide into 3 parts, give 1 or 2 drops of the color, this
time the liquid mixture is divided by 750 ml per-one part of color.
8. Heat the steamer, make sure there is enough water for steaming. Then prepare a cup and
put a little oil so it doesn’t stick.
9. Pour a little red mixture to make a motif on the Kue Lapis Pepe. Steam for 2 minutes.
Then, pour 1 tablespoon white mixture, then steam for 5 minutes.
10. After 5 minutes, pour 1 tablespoon of red mixture on top, steam for 5 minutes. After that,
pour 1 teaspoon of white mixture on top of red mixture, steam for 2 minutes.
11. Then, pour the green mixture until full, steam for 7 minutes.
12. After cooked, remove from the steamer, let cool at room temperature.
13. Finally poke the cakes from the edges.
14. And this is it Kue Lapis Pepe is ready to served ☺
