Bottle Service: Sequence of Service

Floor Team :

 When the guest orders a bottle the server should ask which mixers they would like with it. If
the guest orders a bottle without mixers ask whether or not they would like ice. If they do not
want ice then find out whether they will be drinking the bottle as shots or sipping it.

 Specify the mixers and the number of guests when putting through the order for the bottle
on mission.

 Each Bottle is in tittle of 4 soft drinks cans or 1 juice jug.

 Get mixer jugs (if is juice) if is sodas we serve normally without mixer jugs, ice buckets and
garnishes refilled as necessary. Make sure that a ticket is put through for any additional
mixers that are required. Extra juice jug will be 100 k extra soft drink will follow menu prices.

 Collect the Bottle, Glasses, Ice bucket, (if it is needed Lemons or Limes), Coasters and
straws from the Bar.

 Place at the table all the goods, and organized as standard, glasses on the table first, in front of
each guest.

 Present the bottle to the host.

 Open the bottle and ask if you can poured to the guest at the table in there glasses, start by the
ladies and continue with the gentlemen.

 We will take the glass, putting first the ice, lemon or lime is needed, then we follow by the spirit,
and we finish with the mixers.
(The spirit together with ice will look like three fingers, if not ice will be one finger, at the glass)

 Check if the guest at the table, would like anything else.

 We will need to maintain the service at the table, be attentive if we need to refill there glasses,
clean any dirty at the table, replace ashtrays when are used etc...

 If we do upstanding service customers will be happier, they will come back and give bigger tips.

 If a bottle is reordered ask the host if they would like clean glasses. Carry on replacing
ice buckets and mixers when necessary, there is no need to change it all for new.
Bar Team:

 When you get a ticket for a bottle give the waitress the glasses first, according to the number
of guests specified.
Bottle with mixers – rock glasses + lime wedges/lemon wedges
Bottle with ice, no mixers – rocks glasses + lime wedges/lemon wedges
Bottle with no ice or mixers – either shot, cognac or fine whisky glasses, according to the spirit
ordered.

 Give the ice buckets (2 buckets for 6 or more guests) and garnishes. A plate each of lemon
and lime wedges should be given for vodka, gin, rum and tequila, with salt, cinnamon and
orange wedges also provided for tequila ordered to be drunk as shots.

 Give the mixers, using the large mixer jugs.


 Give the bottle, making sure to get a chilled one if vodka or tequila is ordered. If a bottle is
taken from the freezer replace it straight away, behind the cold ones.
