peptide from egg white protein.
The second one is to isolate ACE with Gel filtration to get the high activity fraction.
The third one is to figure out an application of ACE in food industry.”

“The next following slide will show you the summary of the flow diagram. There are a total
of four sub-topics; preparation, assay, purification, and identification plus synthetization.
These next following slides talk about more details of each topics, first one is preparation,
second one is assay, next one is purification, and the last one is identification plus
synthetization.”

“It is shown that in current work, 19 peptides were discovered in the fractions, five of which
sourced from ovotransferrin and were synthesised by Fmoc solid phase method. ACE-
inhibitory activity was measured by HPLC assay. The 50% inhibitory concentrations of Arg–
Val–Pro–Ser–Leu (RVPSL) was 20 micro M. Based on this remarkable ACE-inhibitory
activity, it is suggested that RVPSL may have potential applications as a functional food,
which could be used as nutraceutical compounds. Egg white protein hydrolysate prepared in
present study is easily incorporated into the daily diet. For example, it is important to prevent
and improve hypertension.
