Corned Muffins

2 cups All purpose flour


¾ cup Corn Meal
¾ cup White Sugar
20 g Baking powder
1 cup corn kernel liquid
¾ cup evaporated milk
½ cup Salted Butter (melted)
1 Egg
1-2 cups Grated cheese (grated)

Preheat oven at 200 Celsius

In a bowl, add flour, corn meal, sugar and baking powder. Mix dry ingredients

Add 1 cup of corn kernel liquid, evaporated milk, melted butter and egg. Mix

When smooth, add 1 can of corn kernel. Fold using spatula.

Grease muffin pan with shortening, margarine or butter.

Add the batter. Add corn on top.

Bake in oven for about 10 minutes.

Decrease oven to 190 Celsius and bake for another 10 minutes or until top is firm.
