Salad John This nutritious soba noodle recipe is made with a delicious tamari lime dressing, Vegan, gluten-free, and ready in 30 minutes! Course Main Course, Salad Cuisine Asian Diet Gluten Free, Low Lactose, Vegan, Vegetarian Keyword cucumber, lettuce, noodles, red pepper, tempeh Prep Time 20 minutes Cook Time 10 minutes Total Time 30 minutes Servings 2 Author Carrie Walder Ingredients * Approx. 10 leaves of romaine lettuce, chopped ‘+ 1 red bell pepper, thinly sliced + 1 medium carrot, chopped 1/3 long English cucumber, thinnly sliced 1 watermelon radish, chopped Approx. 1/2 cup fresh mint, roughly chopped ‘+ Approx. 115 grams soba noodles (enough for 2 people) Pan-Fried Tamari Tempeh ‘* Approx. 200 grams tempeh +1 Thsp tamari + Approx. 1 Tbsp avocado oil (for cooking) Tamari-Lime Dressing ‘+ 4 Thsp avocado oil © 4 tsp tamari + 3/4tsp ground ginger * lime, juiced * 1/2 tsp honey To serve: (optional) * Chopped cashews, sesame seeds, extra lime Instructions 1. Cut one block of tempeh into 1/4-inch strips. Then, cut those strips into thirds. Place in a large bow! with tamari, Stir until well-coated, Set aside. 2. Add all dressing ingredients into a small jar with a lid, Shake to mix and adjust to taste. Set aside. 3. Bring a large pot of water to a boil. Meanwhile, chop/slice all vegetables, chop mint, and add toa large mixing bowl, 4, Once water boils, add dry soba noodles. Stir and cook for about 5 minutes until done, Drain noodles into a colander, and rinse well with cold water. Leave in colander to drain completely. 5. While noodles cook, heat a large skillet over medium-high. Add avocado oil and cook tempeh pieces, about 2 minutes each side until browned. Remove from heat. 6. Add noodles and tempeh to prepared veggies/mint in large mixing bowl. Give salad dressing another shake, then pour over ingredients, Stir ingredients together, until well-coated with salad dressing 7. Serve salad in bowls, along with optional toppings (chopped cashews, sesame seeds, extra lime wedge). Best enjoyed cold! Notes “If you require a strict gluten-free diet, be sure to use gluten-free tamari and 100% buckwheat soba noodles that have been certified gluten-free *Feel free to swap the tempeh for another protein source, if desired, This would taste great with crispy tofu or shrimp!
