THE PACHAMANCA:

The National Day of the PACHAMANCA celebrate each first February's Sunday, with
the objective of highlight this traditional and emblematic dish. This dish is prepared in
many regions of the Peru and it dish is Patrimonio Cultural of the Nation.
The word PACHAMANCA comes from Quechua "pacha" means earth and "manka"
means pot. In conclusion it means pot of earth.
IN HUANUCO:
In my department and especially for my Huánuco city, the PACHAMACA it is prepared
with two types of meat: of Pig and chicken. Also sometimes use meat of cuy and beef.
all the meat is seasoned one day before with liquor of jora, huacatay, chinch, garlics,
salt, pepper and chili peppers.
all this added: sweet potatoes, yucca, corn, broad bean and potatoes of diferents
species (Huánuco is one of the main producers of potatoes in Peru).

for your preparation dig the earth and to heat stones with eucalyptus firewood. Serve
this traditional dish accompanied with chili pepper and onion salad.
