Ingredients

3/4 cup uncooked white rice


1 tablespoon butter
2 cups milk, divided
1/3 cup white sugar
1/4 teaspoon salt
1 egg, beaten
1/2 teaspoon vanilla extract
(2/3 cup golden raisins)

Bring 1 1/2 cups water to a boil in a saucepan; stir rice into boiling water. Add
butter, reduce heat to low, cover, and simmer for 20 minutes.

In a clean saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and
salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Beat the egg
and combine with the remaining 1/2 cup milk. Add some of the cooking pudding to the
egg/milk mixture and stir for about 3 minutes. Combine this and the raisins (if
desired) with the rest of the pudding and continue cooking until thickened, about 2
minutes. Remove from heat and stir in vanilla.

Try replacing the milk with coconut milk/cream and the vanilla extract with coconut
extract!
