Walnut Meat Mixture

This recipe is perfect for anyone who loves beef but is looking to incorporate a few more plant-
based recipes into their diet. The walnuts not only create a great texture but also have high levels of
brain-healthy omega-3s! Plus it’s so easy to make and ultra versatile—you can use it anywhere
you would use meat.

INGREDIENTS: Makes 4–6 servings


1 1/2 cups walnuts 1 teaspoon fresh rosemary
1 cup sundried tomatoes 1 teaspoon fresh oregano
2 tablespoons extra-virgin olive oil 1 pinch black pepper
1 tablespoon fresh sage 1 pinch cayenne pepper
1 teaspoon fennel seeds 1 pinch salt
1 teaspoon fresh thyme
DIRECTIONS:
Add all ingredients to your blender and mix
for 5 minutes or until well combined.

TIPS:
1. If you do not have a blender, you can
make this recipe using a mortar and
pestle. Crush the walnuts first. Dice the
sundried tomatoes and mix everything
together in a bowl until it is moist enough
to stick together.
2. For a nut-free version, use pumpkin or
sunflower seeds instead of walnuts.
3. If you cannot get fresh herbs, use dried.
