EXECUTIVE SUMMARY

The main objective of this project is to design a new lager Brewery Plant, which produces gluten
free beer from the main crop finger millet with a capacity of 151,168.2595 Hl/year. The location
that we engaged for this project is Arsi, Oromia region, around Assella city due to the minimum
cost of production and distribution and also, availability of raw materials. The total investment
cost of the project is 0.189 billion. In designing the plant, the main principal raw materials
required are water, yeast, malt and hop. For minimizing production cost of the plant energy
recovery systems in wort boiling and wort cooling unit operations are applied and as a result fuel
consumption in boiler plant is minimized. Since, energy cost is much expensive these recoveries
are a great advantage and backbone to the economic building of the plant. Again, such
substitution of the crops for beer production will has a good advantage for African content
economy since barley malts are expensive and cannot be highly productive. According to the
profitability measurement factors especially the net present value and profitability index are
positive and greater than one respectively and based on these the project is feasible and
acceptable. Even the others are indicating feasible a payback period of 2.6 years from payback
reference of 10 years is much feasible. This feasible project applied a good heat recovery system
in wort boiling and as result of this heat recovery system about half of steam can be saved, steam
consumption with energy water and without energy water is 3004.2 Kg/day and 1502.1Kg/day
respectively. Again the hot brewing water recovers from wort cooling and began to applied after
second brew is much higher about 1025hl /day of water or in energy 100759.6kg /day (47
kg /day ) comparing this with the steam used for starting brew it is 21% higher, so very good
recovering systems applied.
Key words: gluten free beer, finger millet, wort boiling, wort cooling.
