Traveller’s Stew

¼ cup all-purpose flour Salt and pepper as needed


1 ½ lb beef stew meat, cut in 1” cubes

1 tbsp veg. oil / as needed 1 cup dark beer


4 cups low sod beef broth 2 tsp sweet paprika
1 large yellow onion chopped 2 carrots, peeled, cut ½ in rounds
3 Potatoes, peeled /cubed

1. In a large bowl combine flour, 1 tsp salt and several grinds of pepper.
Add beef chunks and coat well.

2. Warm oil in large pan over medium heat. Add half the beef, do not
over crowd. Cook for 5 minutes turning to brown on all sides evenly.

3. Transfer cooked beef to bowl for later, repeat for remaining uncooked
meat and re add more flour if needed.

4. Pour in 1 cup of dark beer, use wooden spoon to scrape up any browned
bits empty pan into a large pot.

5. Put browned beef in a large pot and add broth and paprika. Adjust to low-
heat simmer beef until very tender about (1.5 hours)

6. Add onion, carrots, potatoes to the pot, and continued to simmer until the
vegetables are tender, about 30-60 minutes.

7. Salt and pepper to taste.
