Food Poisoning

Even though there are clear guidelines from government concerning the
proper handling of food, there continues to be incidences of food poisoning.

Reasons for the increase in the number of cases of food poisoning

1. More ready-prepared foods are eaten e.g. pies,partly cooked


breads,meat.
2. More persons eat out at restaurants,take-away shops, and
hotels. Large-scale catering may result in outbreaks of food
poisoning .
3. Increased importing of food , from countries where food hygiene laws
may not be strictly enforced.
4. Insufficient training of staff who handle food.
5. Increased importing of animal feeds ,which may be contaminated
and will infect the animals that eat them.
6. Failure of consumers to store food correctly and use it by the
recommended date.
7. Temperature too high in domestic freezer or refrigerator,
leading to the growth of bacteria.
8. Failure to prevent cross-contamination in homes,restaurants, and
other eating establishments.

Cross-contamination
Cross-contamination of food has become a major food safety concern since it
is a common factor in the cause of food-borne illness. Foods can become
contaminated by microorganisms from many different sources during food
preparation and storage.

What is cross-contamination?

Cross-contamination is the physical movement or transfer of


pathogens from one food to another food that is ready to eat and
will receive no further cooking.

Cross contamination can occur in 4 ways:

● Food to food
● People to food
● Equipment /utensil to food
● Work surfaces to food

Foods may also become contaminated from other sources such as:
⮚ Chemicals
⮚ Radiation
⮚ Pollution

What is HACCP?

HACCP is a management system in which food safety is


addressed through the analysis and control of biological,
chemical, and physical hazards from raw material production,
procurement and handling, to manufacturing, distribution and
consumption of the finished product.
