This beautiful Trim Up the Tree Christmas Cake is perfect for your seasonal celebration.
Decorated using various tips and icing colours, this cake gives you the freedom to
decorate the tree however you’d like! Use the amazing Countless Celebrations™ tin to
make this tree-shaped cake, as well as a wide assortment of other shaped cakes for any
special occasion.
INSTRUCTIONS:
1. Bake and cool sponge. Spray tin, two “C” and two “D” inserts with non-stick cooking spray. Place “C”
inserts on top outer edges of tin and “D” inserts lengthwise on bottom outer edges of tin (see printable
diagram). Fill tin with batter. Bake sponge following recipe instructions. Let cake cool for 10 minutes,
then remove inserts and level sponge to top of tin. Invert onto platter and let cake cool completely.
2. Shape sponge. Using triangle cutter tool, cut six sections of sponge, as outlined in printable diagram,
to form tree.
3. Tint and prepare icing. Tint icing following colour combinations provided. Prepare decorating bags
with the following tip and icing colour combinations:
4. Decorate cake. Using icer tip and Spring Meadow Green icing, ice edges of sponge. Smooth with
palette knife. Pipe various stars, drop flowers and dots, alternating colours, until sponge is covered.
Use tip 1M and Light Green icing to pipe trunk of tree. Top cake with white and gold Sugar Pearls.

1. Make layered cake. Bake and cool three 15cm cake layers.
2. Prepare icing. Tint icing olive green, soft green, red, soft rose and smoke blue following colour
formulas. Reserve remaining white icing. Level, fill and stack layers for a 3-layer cake, 13cm
high. Use palette knife and white icing to ice cake smooth. Run edge of palette knife across cake
to make ridges. Run fork against cake sides from bottom to top, three times on each side.
3. Decorate cakes. Use tip 2, cut disposable decorating bags and tinted icings to pipe sections of dots
in various sizes over fork lines.

INSTRUCTIONS:
1. 1 day in advance, make mane. Print out lion patterns to cardstock; cut out cardstock pieces. Knead
1/2 teaspoon of Gum-Tex into 113g red fondant. Using 23cm fondant roller, roll out fondant 3mm
thick. Using pattern and knife, cut out mane. Let dry on dusted lightly cornflour-dusted cake board
for 2 days.
2. Bake cake. Bake and cool one layer cake, level to 5cm high. Prepare buttercream icing according to
recipe. Using palette knife, ice cake lightly to prepare for fondant covering.
3. Cover cake. Roll out yellow fondant 3mm thick and cover cake. Also using patterns and knife, cut out
tail from yellow fondant, rolled 3mm thick. Reserve tail.
4. Add details to cake. Roll out black fondant, 1.5mm thick. Using the smooth side of the “E” of double
cut round, cut out two eyes. Using smooth side of “F” double cut oval, cut out nose. Roll out to
lengthen slightly. Position lion mane on cake and attach with dots of icing. Attach eyes and nose
using a damp brush. Roll out a 6 mm ball of white fondant to 1.5mm thick. Using narrow end of tip
10, cut out two dots and attach to eyes with damp brush for highlights.
5. Add tail. Roll out 28g brown fondant, 3mm thick. Using pattern and knife, cut out end of tail end.
Position tail parts to cake on board with damp brush.

1. Bake cakes. Follow tin instructions to create “A” with tin inserts. Fill tin two thirds full with batter.
Bake and cool.
2. Prepare cake board. Using cake as pattern, cut cake board 2.5cm larger than cake; wrap in foil.
4. Decorate cake with flowers. Fit disposable decorating bag with tip 3 and fill with white icing.
Pipe 5-petal and 3-petal bead flowers in corners around cake Pipe tip 3 lines on top edge of cake
between flowers; add second line, about 6 mm from first line. Pipe dot flower centres. Allow flowers
to crust, about 1 hour.
5. Add accents. Mix together pink and white Color Dust™ to get desired shade; repeat with orange and
green Color Dust™. Brush the centre of each flower with green; brush petals with orange and pink.

1. Preheat oven to 180°C. Prepare biscuit tin with baking paper.
3. In large bowl, beat butter and brown sugar with electric mixer until light and fluffy. Add eggs,
Toasted Coconut and Creamy Vanilla Custard Flavours; mix well. Gradually add flour mixture;
mix well. Shape dough into 2.5cm balls. Roll in Demerera Sugar. Place on prepared tins and make
indentation in ball with finger.
4. Bake 15-17 minutes or until edges are golden brown. Remove biscuits from biscuit tin to cooling
rack; cool completely.
5. In large bowl, beat butter, Creamy Vanilla Custard Flavour, Toasted Coconut Flavour and salt until
light and fluffy. Gradually add icing sugar and beat until well combined. Add cream; beat at medium
speed until light and fluffy. Pipe or spoon filling into indentations of biscuits.
