Tools Required For Raw Chocolate


Making

Tools Required For Raw Chocolate Making:


You will need a high speed professional
blender such as the Vita-mix to make

You will want to have raw cashews on

Guide to Cutting & Melting Chocolate

As mentioned in the tools & equipment segment, you will be


using a dehydrator to melt your cacao butter. Cacao butter
is used in all of the chocolate truffle and fudge recipes. So
learning this step is crucial. Luckily it’s easy but just requires
a little patience.

Step 1: Measure

The first thing you will want to do is determine how much


cacao butter we need for your recipes and how much we will
need to cut down, so that we can melt.

You will want to refer to the Conversion Chart I created for


you available in the resources area to determine exactly how
much cacao butter needs to be chopped for your recipe(s)

As you can see the cacao butter comes in hard large blocks.
We will need to cut these down into smaller pieces so that they
melt at a consistent pace in the dehydrator.

If you are ordering your cacao butter in bulk, it will come in a


55lb block or larger. So you will need to first chop these down
into smaller blocks, like these that are easier to handle. I store
these large chunks in 5 gallon buckets.

Step 2: Cut

You will want to use a large knife and your cutting board to
chop down these pieces and then place them into a container
that will fit into the dehydrator.

Using your scale, you can see how much is needed and make
sure that there is no waste.

Step 3: Melt

Place your container of chopped Cacao Butter into the


dehydrator. Turn the knob on top to 115 degrees and let it stay
in there for 50 minutes. This is where your timer comes in.
After 50 minutes, stir it real well, and place back in for another
10 minutes until completely melted.

Once it’s melted you can take it out and begin with your
recipes!

Fudge

Step 1:

Make sure you have already melted down the correct amount
of raw cacao butter.

Step 2:

Add in all ingredients except for the cacao butter into the Vita-
mix. Turn blender on low and slowly increase intensity until
well mixed.

Step 3:

Slowly add in the raw cacao butter. Pour directly into the
center of the Vita-mix while it is blending. Slowly increase
the intensity and also use the tamper to help you blend the
ingredients.

Pour the fudge batter into a lined bread pan. (Use parchment
or freezer paper).

Step 5:

Freeze the fudge until set (approximately 1-2 hours).

Step 6:

Remove the fudge from the freezer and immediately remove


the fudge from the pan. You will need to use a butter knife to
score the edges. Using the excess parchment or freezer paper
as handles, lift the fudge from the pan.

Tips:

Make sure to soak any nuts required in the recipe.

Make sure not to over heat the truffle batter beyond 115
degrees or to over heat your Vita-mix.

Cut your fudge while frozen for clean cutting.

Make sure to refrigerate or freeze your fudge until ready to


eat.

Truffles

Step 1:

Make sure you have already melted down the correct amount
of raw cacao butter.

Step 2:

Refrigerate the truffle batter for at least 1-2 hours or until firm
but still pliable.

Step 5:

You are now ready to roll your truffles. Use a spoon to scoop
out some of the truffle batter. Next, roll into a ball using your
hands. Finally, roll into the cacao powder or other topping.

Tips:

Make sure to soak any nuts required in the recipe.

Make sure not to over heat the truffle batter beyond 115
degrees or to over heat your Vita-mix.

Make sure to refrigerate or freeze your truffles until ready to


eat

Tips & Things to Watch For When Making


Raw Chocolate

• Melted Cacao Butter does harden back up! So wash


your utensils, equipment, and counters with hot
water before it hardens back up. This will make your
clean up process much easier on you.

• Chocolate making is chemistry. It can be sensitive


and reactive to water. Make sure to use dry utensils
and equipment.

• As a reminder, raw foods and raw chocolate are


heated less than 115 degrees fahrenheit. Watch to
make sure that the dehydrator and the Vita-mix to
not heat up your chocolates beyond this temperature.

• Make sure to soak your cashews for mixing in the


recipes. This will make blending easier and prevent
your Vita-mix from over heating.

• Don’t confuse cacao butter with coconut butter in the


recipes. Always add in the melted cacao butter last.

Guide to Melting Cacao Butter If You


Don't Have A Dehydrator

If you don’t have a dehydrator then you can use your stove
stop. Just be careful not to over heat the cacao butter. To melt
your cacao butter on the stove top you will still want to cut
or shave the cacao butter. You mill also want to refer to the
reference guide to measure the right amount by weight so that
you melt down the right amount for your recipes

Step 1:

Place the shaved cacao butter in a pot and place on the stove.

Step 2:

Slowly heat at 2 or 2.5 and continuously stir. You want the


color to be yellow, not completely translucent. This will take
approximately 5-10 minutes

Guide to Mixing Chocolate Recipes If You


Don't Have A Vita-mix

If you don’t have a high speed blender, you can mix your
chocolate recipes by hand.

Preferably, you will want to use a whisk, but as you can see in
the video, a fork will also work.

Step 1:

Add all ingredients together in a bowl (except for the cacao


butter). Mix well, until the cacao powder is incorporated.

Step 2:

Slowly add in the cacao butter (melted). Make sure to really


stir in the cacao butter completely. Otherwise, you will end up
with a crunchy bite of a thin layer or cacao butter. Not good!

Step 3:

If it is fudge you are mixing pour into a loaf pan lined with
freezer paper or parchment paper. Let set for at least an hour
and then remove.

If you are making fudge, place the mixed batter into the fridge
to firm up and then remove when you are ready to roll the
truffles.
