Dear Dr Frank,

I, Ms Alina Alam, am the founder and CEO of Mitti Cafe, an award-winning NGO with 16
cafes within various institutions across the country. We know that St. John’s Medical
College is a reputed institution frequented by thousands of patients and students every
day. St. John’s service to the nation has been indispensable and they have been
torchbearers in providing affordable healthcare to people of Kolkata. Given the rich
history and a tremendous footfall there, it is imperative to have a restaurant on the
campus that can provide affordable and fresh food to its visitors. We at Mitti Cafe are
committed to providing wholesome and high-quality food prepared by our employees
with physical, mental, and intellectual disabilities.We operate at a low cost, are
sustainable and can become operationally sustainable in 2 months.

The Covid-19 pandemic has increased the working hours of healthcare workers.
Provision of healthy and hygienic meals is crucial in this unprecedented time.
Employees at Mitti have cooked and served over 1.3 million meals throughout the
pandemic. However, supporting them financially is getting difficult due to a dearth of
resources. Opening a Mitti Cafe at St. John could kill two birds with one stone. The staff
and patients at St. John can relish freshly made, gluten free options with high quality
ingredients. Additionally, Mitti will be able to offer employment to those with disabilities
so that they can be economically independent and live with dignity.

The proposed cafe will offer dine in, take away and delivery options with a menu that
will include healthy home-cooked meals. We will also have a separate menu to cater to
the needs of the patients if in case required. Customisations for patients will involve
addition of minimal spices and oil to the food. We will be practicing all social distancing
norms as advised by WHO including hand washing and sanitation of all tables before
every customer. We also perform routine employee health tests and vaccinations,
ensuring they wear masks at all times.

St. John could provide land on lease in its premises to open the cafe. Setting up the
cafe and procuring operation supplies would come under Mitti’s purview. We will take
care of our electricity bills, water bills, cleaning charges, employee compensation and
benefits. We will be providing food at subsidised rates to all the employees of the
hospital. We are open to further negotiation on special rates for employees.

Thus, for a rent of Rs 50000, we request you to let us set up a restaurant in 100 sq ft
space in your cafetaria for us to operate from. This, in addition to offering affordable
dining to patients and students in the campus, will also give employment opportunities
to 10+ specially abled people, and will also bolster the image of St. John’s as an
institute committed to serving the marginalised. As a growing startup, we strongly hope
well established humanitarian organisations like St. Johns would give us an opportunity
to grow and make the world a better place. Looking forward to a positive response for
