Resumen
El presente estudio tuvo como objetivo determinar la calidad que presenta dos especies de granos como lo
son el maíz y el trigo, así como en harina de trigo. Se obtuvo peso hectolitro de los granos, donde obtuvimos
mayor peso en el maíz que en el trigo ya limpio, ya que el trigo presentaba más impurezas que el maíz; se
midió la cantidad de materia extraña, donde relacionado a una muestra representativa de maíz y de trigo se
definió que el trigo presentaba mayor cantidad de materia extraña; se midió la humedad en las especies de
granos, donde el trigo presentaba una mayor pérdida de humedad que el maíz; comprobando la información
de clase así como comparar el trigo con el maíz, el primero presentando una mayor humedad y de impurezas.
Para la harina de trigo se le aplico la prueba de gluten, cenizas y humedad para conocer si existía una
relación con lo visto en clase. De acuerdo a esto nos dieron por resultados una cantidad mínima de cenizas
aunque no conformes, ya que rebaso el nivel permisible de cenizas en harinas. Las pruebas fueron obtenidas
de acuerdo a lo indicado por el PA, así como la metodología dada y adquirida.
Abstract
This study aimed to determine the quality which has two species of grains such as corn and wheat and wheat
flour. Hectoliter test weight was obtained from grains, which got heavier in maize and wheat in clean, because
the wheat had more impurities than corn measured the amount of foreign matter, which related to a
representative sample of maize and wheat was determined that the wheat had greater amount of foreign
matter, moisture was measured in species of grains, where wheat had a greater loss of moisture that the corn
checking class information and compare with corn wheat , The first with a higher moisture and impurities. For
wheat flour was given the test of gluten, ash and moisture to see if there was a relationship with that seen in
class. According to these results gave us a minimal amount of ash but not satisfied, given that they exceed the
permissible level of ash in flour. The tests were obtained as indicated by the PA, as well as the methodology
given and acquired.
