Homemade Elderflower Syrup
Shake the blossoms, so little insects can fall off. Cut the stems right after the blossoms. Bring the water and
sugar to boil until the sugar is completely dissolved, then let cool down for a moment. Meanwhile put the
blossoms together with the lemon slices into the jars (rinse the lemons thoroughly before and cut into thin
slices), then fill up with the syrup. Cover the elderflower syrup and let it infuse for 3-5 days in the fridge or a
cooler, dark place - stir everyday once or twice. Afterwards sieve the homemade elderflower syrup through a
fine sieve or cheesecloth, bring to boil and fill into hot rinsed bottles or jars. Leave the elderflower syrup in the
fridge to store it.
