Plant based foods are becoming a focus of doctors, hospitals, insurers, and
employers who are frustrated by the slow progress of drug treatments in reducing
food related diseases like Type 2 diabetes, heart disease, cancer, auto immune
diseases, even Alzheimer's. They're also encouraged by the growing body of
research that supports the idea that when people get well, they stay healthier and
more likely to control their chronic disease while often getting lasting results. It is
indeed a New Day and New Way, as millions of people wake up to the benefits of
using food as a healing tool.

But knowing intuitively that food can influence health is one thing, having the
science and the confidence to apply it is another.

Have no fear. In this book we will take a deep dive into the topic of how to use
Food as Medicine and some of the research to back why it works to improve so
many lives.

Whether you need to heal from one of countless chronic degenerative diseases or
to move from a state of non specific aliments with many minor symptoms, no
matter where you're starting from, I ask you to look at your life with complete open
honesty. What would you be willing to do to reclaim radiant health, feel your best

To restore a sense of order, a sense of equilibrium in your life….

I ask you to ask these simple questions of yourself because they were the same
questions I had to ask of myself years ago when I was desperate to get well. When
I began my own healing journey, I was very sick, dangerously out of balance, more
like dangling off a cliff. In my 50’s, I was diagnosed with uterine cancer after
struggling for years with a difficult menopause, early arthritis and chronic fatigue.
Like most American’s I was conditioned to believe that when you’re diagnosed
with this life threatening disease your only option is to bring out the big guns. You
know, the Big Three: Go to war with surgery, chemotherapy (a derivative of
mustard gas), and radiation. Hand your life over to your doctors, and pray.

Yet, when my mom was diagnosed with cancer years before when she was 53, she
had done just that….everything Western medicine had to offer, and died anyway. In
the end, when the cancer spread throughout her whole body, and she’d capped her
insurance and savings, she was sent home to wait. Watching her suffer with no
options was heartbreaking. Back then, as a family, we were clueless. Today I know
so much more.

By a stroke of Divine Grace, a friend suggested I study the works of Dr. Ann
Wigmore. She had cured her own cancer using fiber-rich raw plant-based foods,
fresh pressed juices, unpasteurized fermented foods, wheatgrass juice and colon
cleansing. Dr Ann’s relentless faith in detoxing encouraged me to attempt healing
myself with diet and lifestyle change.

My detour from the normal route to treat cancer lead me on a healing journey I
could have never guessed. I must admit, when I began, I was a bit apprehensive. It
was all soooo new to me. But we all must begin as students. As I stayed consistent
with the healing foods, my tumor shrank from the size of a melon to the size of an
orange in just 3 months. I went from being scared-senseless to feeling like I was
being graced by God. Within a year there was no sign of it. I was cancer free.
Today, I am a 16 year cancer survivor.

As my life started to gain some equilibrium I began to study natural nutritional


science to understand how and why detoxing the body, eating raw plant-based
foods and colon cleansing were so effective.

HOW DO YOU GET STARTED?

How do you begin your own healing journey? Not with a long, long liquid fast or
starvation tactics. There is limited love and joy in that and leaves too much room
for us not to succeed! I believe we want and need to be, first and foremost, proud
of ourselves, to value ourselves. This book will show you how to use only clean,
organic living foods and fresh juices in nutrient dense combinations to cleanse,
restore and rebuild the body. If you long to learn a new way to live while

This book will introduce you to our Food As Medicine Healing System. The first
step is to educate yourself as to how and why certain foods harm the body, while
others assist and encourage the bodies healing process. I believe that when you
understand fully why you are making change it is easier to stay focused on your
intentions and desires. You can then begin to embrace the creativity and divinity of
the brilliance of your body and how hard it works to support your precious life.

The second step is having a plan. As with many endeavors preparation is essential.
Our Healing System will provide you with a compass and road map. Following a
path in your healing journey gives your day, your week, your month, your life,
more order and control. We want to avoid helter-skelter when it comes to our
health. As the sun comes up daily in the east and sets in the west, there is great
order in the universe that we can tap into. With a structured healing system and
detox plan you get to make choices and decisions rather than leaving things up to
chance. You stay focused, stay on track and set goals that measure your success.

Michele Powers-Hardy’s Story: Edgewood, New Mexico

A couple of days after Christmas our graduate student Michele’s husband was
diagnosed with Stage 4 Non-Keratinizing Squamous Cell Carcinoma of the
throat, tongue, and all throughout his neck. The oncologist recommended
surgery, aggressive chemo and 40 rounds of radiation. This had the potential
to leave him with no teeth, loss of taste, loss of hearing, possible blindness and
a burnt esophagus, that would make it impossible to eat without a feeding
tube.

Luckily Michele had taken our Holistic Cancer Coach Program and had great
faith in what she learned. Using the ‘Food As Medicine Healing System’ we
teach here at Diet For Living School she created a personalized program for
him that consisted of daily juices, wheatgrass juice, raw foods, fruits, live
fermented foods and superfood smoothies. The evening is a simple cooked
meal with a salad. She added to his protocol Vitamin C, glutathione and Poly
MVA infusions once a week.

Five months later Michele reports: His enlarged nodes, one the size of an
apricot kernel, is now the size of a small blueberry; the largest one, the size of
an egg, is now the size of a peach pit. “He’s doing great” and feels like what
they are doing is the right choice for him!
CHAPTER ONE

USING FOOD AS MEDICINE

The latest data now shows that one out of two American men and one out of three
women will contract cancer in their lifetime. Right now the standard Western
protocol for cancer is surgery, chemotherapy and radiation….yet 2020 studies
found that 1,600 American’s die of cancer every single day, 69 every single minute.
The American Heart Association reports half of U.S. adults have some form of
cardiovascular disease while 30 million people in our country are struggling with
Type 2 diabetes. 1 in 8 adults of all ages suffers from a range of auto immune
diseases, with 75% of that population being women. The Alzheimer’s Association
estimates that 6.2 million people in the United States have been diagnosed with the
disease.

For years we have been misguided into believing if we just throw more money at
cures a solution will be found. A cure that would allow us to pop a pill or get a
vaccine and make the whole nightmare go away. A cure that would not ask us to
change what we eat, not demand we slow down, not invite us to get involved, not
request us to understand how our bodies work or what it truly needs to connect
with the natural rhythms of nature .
Fortunately there is an evolutionary shift taking place in the world of healing that
is challenging the status quo of our generational thought patterns when it comes to
understanding many of these diseases. Nutritional researchers have made so many
important scientific discoveries in the past five years. Research is now attributing
these numbers to the nutrient deficient, chemical laden Western Diet, in
conjunction with harmful lifestyle choices and environmental factors.

HOPE: For years, pioneering natural nutrition healers have known that a period of
deep detoxification, eating 100% live, plant-based foods, has the potential to
reverse many diseases the population now suffers from. In most cases these
diseases are the ones conventional medicine has led us to believe that we have no
personal power over.

One of those pioneers is my mentor, Dr. Ann Wigmore. After healing her own
cancer using live-vegan foods, fresh pressed juicing, unpasteurized fermented
foods and wheatgrass juice, she wanted as many people as possible to know about
her discoveries. She opened a training center and called it 'Hippocrates Health
Institute'. The Institute began in 1970 with the concept that the human body is a
self-healing, self-rejuvenating organism if given the proper tools and inner
environment. She taught that many diseases are caused by the abuse of one's body.
That the root cause of many modern ills lay at the end of our fork. Our modern
food system that consists of highly processed foods drenched in a multitude of
chemicals has created conditions in the body that cannot sustain true health. A
return to foods closer to Nature allows the body to cleanse, repair and rebuild itself
simultaneously. This three-prong approach set Dr. Ann’s work apart from other
detoxification therapies that just concentrated on raw juice cleansing with the
absence of live food fiber and gut building fermented foods.

People with diverse backgrounds began arriving from all over the globe to learn
her living foods training. To learn a new way to live in the world….

During her long and loving service to humanity, she traveled extensively,
promoting her living foods program, lecturing in over 20 countries. Students, in
turn, came to the institute in Boston to acquire the knowledge of her methods and
return home equipped and empowered with natural techniques to help reclaim their
health. Over time, as the popularity and success of her work grew, learning centers
big and small opened in the United States, Puerto Rico, Europe, Australia and
India.

Diet For Living School's unique contribution to spreading the word about Dr. Ann's
remarkable and inspirational work has been to create our own structured plan
influenced by her discoveries and wisdom. A Food As Medicine Healing System
that can be practiced by anyone seeking to improve their lives through education
and lifestyle changes.

Food as Medicine is a term which was originally coined by Hippocrates, the Father
of Western Medicine. It was his belief that eating predominately wholesome living
foods is the basis of good health. Hippocrates said, almost 2,500 years ago, “Leave
your drugs in the chemist’s pot if you can heal the patient with food”.

I know first hand that diet alone cannot and should not replace medicine in all
circumstances. A few Summers back I cut open my leg while moving a railroad tie
in the garden. It was a freak accident. I pivoted the heavy tie and let it drop into
place. But I hadn’t noticed it had a giant rusty spike sticking out of the end until it
drove through the skin of my lower leg to the bone. I was in crazy trouble as I held
the wound together. I was able to get a call out to my husband, who was an
ambulance driver/medic in the military. He tore through traffic to take me to the
emergency room. I received 35 stitches from a veteran nurse practitioner who
loved the challenge of trying to repair the mess that was my leg. He was an angel.
This was not a job for juicing or a blender drink. But once I got back home, I put
my healing in the hands of God and topnotch whole plant superfoods to provide
the power to knit my leg back together. I juiced, blended and ate unpasteurized
fermented foods to boost my immune system. In time, as the body is Divinely
designed to do, my leg mended.

I know, at first, it is very hard to put so much trust in using live plant-based foods
as healing tools. It is not at all what we have been taught as a culture, especially
with illnesses like cancer and diabetes, or even auto-immune diseases. Diseases we
have been told for generations that can only be managed by Western medical
professionals, even if it is not working. Even if we have transitioned to shopping at
Whole Foods, we are still led to believe that, for all that ails us, there must be
products for it in the supplement department, not the produce department.

Yet there is presently a broad movement happening in nutritional science. As


research equipment and the power of microscopes have improved, nutritional
scientists are now validating the therapeutic power of plant-based foods as healing
vehicles. Understanding how plant-based foods work in tandem with the body is
truly fascinating.
Some examples of evidence-based discoveries are:

> Raw Carrots: Contain beta-carotene, an antioxidant scientists believe can protect
cell membrane from toxic damage and slow the growth of cancer cells. To load up
on this protection, there is a lot of fresh juicing going on in our Food As Medicine
Healing System.

> Fully Ripe Bananas (with the brown spots): Produce a substance called ‘tumor
necrosis factor’, which can eliminate abnormal cells. I know it’s hard to find
bananas fully ripe but you can bring them home and wait a couple of days for them
to turn. Then add one to your smoothie.

> Raw Beets: The red color in raw beets comes from compounds called betalains,
found to inhibit carcinogen formation. We love a slice or two in our juice creations,
grated on top of salad or made into live fermented kraut.

> Raw Garlic: Studies have found that compounds in fresh garlic help with DNA
repair and decrease inflammation. How do we use garlic? We put raw garlic in
everything.

> Raw Nuts: A new study from Yale Cancer Center shows colon cancer survivors
who regularly eat raw nuts had a significantly lower risk of cancer recurrence by
46%. We are big fans of making raw plant-based fermented cashew cheese.

> Unpasteurized Miso: Studies have found that women with the most isoflavones, a
class of phytoestrogens, in their diet have the lowest risk of breast cancer,
especially postmenopausal women. That is one of the reasons unpasteurized miso
paste is used in so many of our Food As Medicine recipes.

> Fresh Leafy Greens: Possess a chemical structure that allows them to bind to
harmful chemicals and literally guide them out of the body, protecting us from their
harmful damage. This is a good reason to eat salads made of assorted baby greens
like kale, chard and romaine lettuce.

THE REAL MAGIC

Plant-based whole foods contain a number of substances that work synergistically.


Meaning that, in the Food As Medicine Healing System, when we mix some of the
above foods together, we construct a powerhouse of healing potential. Mix carrots
and beets together and we create a dynamo partnership. Mix carrots and beets in
the juicer with apple, lemon and celery, and you have a super concentrated
cocktail. Mix raw cashews with garlic and unpasteurized miso and you have a
plant-based cheese that is not only delicious but a highly efficient food.

Remove processed chemical filled foods that are causing chronic inflammation and
harm. Eat foods that invite healing to take place and allow the miracles to happen.
CHAPTER TWO

DETOX CLEANSING AND THE POWER OF LIVING FOODS

The path to wellness in the Food As Medicine Healing System always begins with
detoxification. In its simplest form detoxing is the removal of environmental and
dietary toxins from the body that are linked to many disease conditions that are
now considered to be food and lifestyle related. Modern living has made it difficult
for the eliminative organs of the colon, skin, kidneys, liver and lungs to operate
normally. Not only do they have to perform their ordinary cleansing functions, they
must also contend with a daily diet composed of highly acid-producing animal
foods and processed foods with their thousands of chemicals and additives.
During the detox process the body is able to release accumulated proteins, mucus,
fatty deposits, dead cells, metabolic waste, parasites and bacteria. As well the body
can release chemical additives, pesticides and heavy metals buried in the organs.

Cleansing the body with nutrient-dense, raw fiber-rich foods, fresh extracted juices
and live fermented foods, allows toxins to leave the body gently over time. The key
is to encourage these toxins to be removed at a pace which will not cause further
stress. This is why we do not propose long periods of only juice fasting, but
recommend fresh pressed juicing with a full spectrum of raw and living foods to
address all the systems in the body as a wholism. Cells in our body are dying and
replacing themselves at the rate of 300 million a minute. The quality of the new
cells is dependent on the quality of the building materials we provide it with.
Superior building materials offer the promise of superior results. As the body
cleanses over time and waste is removed through the elimination channels, vital
nutrients can once again reach the cells and allow repair and rebuilding….a three
prong approach to healing.

Our Food As Medicine Healing System requires that we consume copious amounts
of high quality live plant-based foods: Detox cleansing is always practiced with
only vegan organic raw and living foods. This is because high temperatures alter
the chemical structure of vital nutrients in all our foods.
Temperatures higher than 118 degrees render useless:

> 50% of the protein


> 80% of the vitamins
> 80% of the minerals
> 85% of the antioxidants
> 100% of the enzymes.

Only high vibrational, live vibrant foods close to Nature, with all their nutrients
intact, unprocessed and unchanged, have the ability to deeply nourish muscles,
skin, lungs, blood as well as our brain, nerves and bones. Addressing chronic
dehydration with filtered water and fresh-pressed juices disrupts stagnation and
stimulates the eliminative channels. With the daily concentration of copious
amounts of rainbow raw fresh veggies, fruits and nuts, sea vegetables,
unpasteurized fermented foods and chlorophyll rich wheatgrass juice, the body can
then begin to move toward bio-balance according to the Divine Plan, the ultimate
Plan….

Detoxification can only be accomplished with 100% organic living foods.


Reduction of contamination occurs when conventional foods are replaced by all
organic foods.

Studies across the globe have proven time and time again that the amount of
chemicals and pesticides found in non-organic foods is truly alarming. Non-organic
foods (including what is now touted as the Clean 15) are grown in what is called
bio-solids. Bio-solids are the treated waste from households, hospitals and industry
used to fertilize non-organic fruits and vegetables. Industry alone uses more than
72,000 chemicals. This waste is contaminated with heavy metals, endocrine
disruptors, pathogens, pesticides, pharmaceuticals, flame retardants and
dioxins….basically a dangerous chemical soup. These chemicals are absorbed into
plant fibers while they grow, then transfer to our bodies when we consume these
dangerous poisons. It is no wonder that so many of us are struggling with our
health.

Certified organic crops are prohibited from being fertilized with sewage sludge.

Glyphosate also known as Round-up, is the world’s most widely used herbicide in
commercial farming. This herbicide is sprayed liberally in the fields and is
absorbed directly into the cells of plants. Farmers that grow certified organic crops
are not allowed to use the herbicide glyphosate when growing fruits and
vegetables.

Buying organic sends a message to Big Agriculture. We refuse to eat foods that are
a danger to that of our family, friends and every living being on our precious
planet.
CHAPTER THREE

THE INNER ENVIRONMENT THAT SUPPORTS THE GROWTH OF


DISEASE: GETTING TO THE ROOT CAUSE
Trillions of dollars have been spent on finding 'cures' for the multitude of diseases
we now suffer. And still the numbers climb.

Many of these diseases once considered ‘old peoples diseases’ are now effecting
people as early as 30 and 40 years old. You may assume this is just the new
normal. Yet the truth is, this devastation is only occurring in what is called the
'Industrialized World'. There are many, many parts of the world today that are not
suffering from a health epidemic of this immense proportion.

These diseases do not mysteriously pop up in the body. Certain conditions allow
them to grow. What causes them to seize the opportunity to multiply in different
ways in different bodies is multifactorial and still under speculation. But what
science and research does know for sure is that our industrial food supply and our
harmful lifestyle choices play a major roll. The inner environment that supports the
growth of food related diseases in the body has many factors in common. I would
like to talk about that next.

THE ROOT CAUSE OF FOOD RELATED DISEASES

> EATING LARGE AMOUNT OF ACIDIC FOODS: Understanding the


importance of the bodies ‘acid alkaline balance’ and it’s relationship to what you
eat is essential to reclaiming your health. Our bodies insist on proper equilibrium…
neither too acidic or too alkaline. The Standard Western diet often consists of
100% acidic foods. This constant destabilizing of the body causes all kinds of
health havoc. Without prompt attention, acidosis can lead to a host of health
complications. This is because acidosis is very caustic to our organs. Left
unchecked, this imbalanced condition creates continuous irritation and
inflammation to the organs and tissues. Over time this acidic environment wears
away joints and tendons that can result in arthritis. In the case of rheumatoid
arthritis, chronic acidosis can cause inflammation of the blood vessels and damage
to the nerves. With diabetes, acidosis can wear away at the delicate nephrons in the
kidneys and lead to kidney disease. As well 65% of diabetes suffers graduate to
Alzheimers disease over time. This abrasive material in the blood can even
deteriorate the sheath around the nerves leading to possible multiple sclerosis. As
inner systems start to give way, damage at the cellular level can lead to the
mutation of structures at the DNA level, which sets the stage for cancer.

To promote balance and reverse disease conditions we need to consume a diet of


80% alkaline foods and only 20% acidic foods. The good news is that the Food As
Medicine Healing System is loaded with alkaline foods and juices that help restore
the body’s needed homeostasis.

> EATING THE STANDARD AMERICAN DIET (“SAD”): This modern day diet
consists of highly addictive, acidic, inflammatory, man-made manufactured foods
containing nutritional levels too low to fight disease or support life, no matter what
the label’s say. Consumed for the last 65 years or more, it has caused immense
damage to the human body. Eating predominantly animal products and processed
foods, ingesting chemicals (including commercial supplements), overeating, and
excess stress, disrupt and weaken the immune response and every other system in
the body. For many of us, our bodies have become exhausted from digesting heavy
complicated foods day in and day out. If you are eating foods that take a long time
to digest, your body’s energy and resources are being wasted on breaking down
meals rather then helping it to cleanse, renew and repair. The perfect invitation for
food related diseases. Eating plenty of anti-inflammatory fruits, vegetables, nuts,
seeds, leafy greens, unpasteurized fermented foods and sea vegetables is a
fundamental step toward allowing the body to recover from years of abuse.

> EATING A DIET HIGH IN MODERN WHEAT: Yes. It is not our imagination.
The wheat we were eating since the dawn of civilization and came to depend on as
a food source in the western world has changed dramatically. It was genetically
modified in the laboratory in 1971. Agricultural scientists have hybridized,
crossbred and altered the genetic code of wheat strains so that our body can no
longer recognize it. The new modern wheat is now 75% starch. Starch turns to
sugar within ten seconds in the bloodstream.

As a wheat eating culture, we eat a tremendous amount of wheat products in the


form of pasta that include spaghetti, penne, elbows, shells, lasagna, whole wheat
pasta, egg noodles…. Then there is the artisanal wheat products like muffins,
bagels, danish, crescents and pita bread….And of course French bread, bread
sticks, Hamburger buns, a huge variety of hot dog buns….and of course we love
our pizza. Between all the added sugar in processed foods and the starch that turns
to sugar in modern wheat our health has been significantly altered.
Because of wheat’s incredible capacity to send blood sugar levels through the roof
and maintain low-grade chronic inflammation, it has contributed to a diabetes
epidemic in both children and adults.Type 2 Diabetes has been associated with
increased risks for several cancers, including colon, postmenopausal breast,
pancreatic, liver, endometrial, bladder and non Hodgkins Lymphoma. Because
sugar is cancer’s favorite food this high starch wheat has contributed to our
epidemic of cancer. In the Food As Medicine Healing System we avoid modern
wheat products and gluten free products.

NOTE: Dow Chemical recently invented 'Wellence Gluten Free 47129, polymers
derived from cellulose and carcinogenic chemicals that mimic gluten. These
polymers go by the names of ethyl-hydroxypropyl methlycellulose and carbon
methycellulose. In short, it is actually ‘wood pulp’, cleaned and manipulated with
chemicals'.

In the Food As Medicine Healing System we avoid Wellence Gluten Free 47129,

We encourage learning to make flour from whole foods like: almonds, coconut,
flaxseeds, kasha, sesame seeds, walnuts, sunflower seeds.

> EATING A DIET HIGH IN REFINED SUGAR: White sugar is cancer cells
favorite food. A cancer cell can gobble sugar 50 times faster than the average cell,
helping it to grow and multiple. This highly addictive, inflammatory ‘non-food’
source is also laced with harmful chemicals. When cooked down natural sugar sap
is dark brown. To make it crystal, ‘whitey-white’, sulfur dioxide is used. Other
caustic chemicals include phosphoric acid, calcium hydroxide and
polyacrylamide….

You may think, “How bad can a little white sugar be”? But you may be shocked to
learn that the United States Department of Agriculture (USDA) reports that the
average American consumes between 150-170 pounds of refined sugar a year. This
equals out to 3 pounds of sugar in a week. That's a lotta-lotta processing for the
liver, a lotta-lotta sugar floating around in the blood stream. You may say “But I
don't eat a lot of sweets....” Yet you may be consuming the white stuff daily
without even knowing it, sabotaging all your best efforts.

In the Food As Medicine Healing System we avoid all processed products that
contain refined sugars, corn sugars and artificial sugars.

NOTE: Many of us may use artificial sweeteners because they claim to contain
“zero calories”. Aspartame is used as a sweetener in many foods, sold under the
names Nutrasweet, Equal and it’s new catchy name Amino Sweet. Aspartame is
used in many low-fat, low-calorie foods and beverages such as DIET COKE,
which contains 185 milligrams of aspartame per can. Also aspartame can be found
in blender drinks, flavored waters, sport drinks, vitamin powders, low-fat
yogurt….and the list goes on.

But here’s the catch. Aspartame is not natural, it is a synthetic and is about 200
times sweeter than table sugar. Ten percent of this sweetener contains methanol,
which when absorbed by the intestines breaks down into formic acid and
formaldehyde. Yes, formaldehyde! Formaldehyde is used to embalm the dead. It is
known to cause cancer, increased blood sugar levels, retinal damage, and interferes
with DNA replication that can lead to birth defects. If you want to stay clear of
disease, keep clear of this deadly man-made chemical sweetener.

>WEIGHT-GAIN: You may already know that sugar is a culprit for putting on the
pounds. But how does the white powder convert to fat in the body? Anytime you
have filled the body with more fuel than it actually needs, your liver’s sugar
storage capacity is exceeded. That's very easy to do when eating or drinking foods
with a high sugar content. When the liver is maximally full, the excess sugar is
converted by the liver into fat and returned to the bloodstream. It's taken
throughout the body and stored wherever our own individual body type tends to
store adipose fat, like the stomach, hips, butt, and breasts.
Fat cells secrete large amounts of estrogen into the bloodstream which acts as
growth agents for cancer cells. The sad truth is the more fat you got, the more it
produces estrogen. Estrogen has a love affair with cancer cells and cancer cells
have a love affair with estrogen. They are closely interwoven. Yet we do not
recommend 'dieting' while practicing a healing protocol. In most cases when you
chose to detox with organic 100% living plant-based foods, the bodies sluggish
metabolism will have a chance to mend, allowing you to drop stubborn pounds.

In the Food As Medicine Healing System it is all about embracing balance with
food. Meals are kept nutrient dense, yet sensible and simple. We will introduce
recipes and a daily detox schedule later in the book. We suggest a fasting period
between 6 p.m. and 6 a.m. to cooperate with the natural rhythms of our internal
clock. Day time hours are for digesting. Night time hours are when the body
concentrates on the very important job of cleansing and rebuilding. The body can
not accomplish this all important nightly task if it is still busy digesting that day’s
food intake.

> EATING PASTEURIZED DAIRY: Scientists have found that pasteurized


commercial dairy milk plays a large part in the heightened risk of ovarian, breast,
uterine and prostrate cancer...all hormone-estrogen dependent tumors. The
principal reason is that commercial dairies now milk their cows about 300 days per
year. For much of that time the cows are also pregnant. A very modern farming
practice. Before industrial farming a cow was never pregnant and providing milk at
the same time year after year. But today, our food is all about economics. As the
pregnancy progresses, the estrogen content of the cows milk increases. Cancer
cells have a love relationship with estrogen. It acts like fertilizer in the garden
helping cancer cells to grow and multiple.

> CONSUMING A DIET HIGH IN ANIMAL MEAT PROTEIN: Humans have
been on Earth for about 150,000 years….some scientists say longer. Until we could
figure out farming, about 12,000 years ago, we depended on foraging and
collecting. This time period did not allow for picky eaters with infinite choice
declaring ourselves as vegan. If one was to survive, we ate what we found. The
Modern Paleo Diet would lead us to believe that we were dining on giant chunks of
wooly mammoth. Nothing could be further from the truth. Forging consisted of
snare trapping mice, snakes, rats, seafood, and meat brought down by bigger
animals. Collecting consisted of nuts, seeds, fruits, seaweed, honey, birds eggs,
wild roots, shoots and greens. Our ancient ancestors traveled often, encountered
changing landscapes and food sources, and adjusted accordingly. Some parts of the
world have diets where everyone has thrived for generations. America is not one of
them.

In the early 1900’s Americans were told to eat well over 100 grams of protein a
day. Current advances in medicine, technology and biochemistry are now finding
we got protein all wrong. Eating a diet high in animal protein can lead to chronic
illnesses such as arthritis, heart disease, osteoporosis, Alzheimer’s, Parkinson's,
kidney disease and some cancers, according to the Physician’s Committee for
Responsible Medicine.

Our fear of not getting enough protein in the Western world has led us to become
heavy meat eaters. Uric acid in meat is very hard on the body. It can throw the
whole acid/alkaline balance off.

In 2015 the World Health Organization (WHO) published it's well researched
report…"the foods that define the American Diet, processed meats like hot dogs,
ham, sausage, deli meats and bacon” were classified as a Group 1 carcinogen.
Twenty two experts from 10 different countries reviewed more than 800 studies to
reach their conclusion.

Studies by the American Institute For Cancer Research present a strong correlation
between animal protein and several kinds of cancer, particularly breast, thyroid,
prostrate, pancreatic, endometrial, ovarian, stomach and colon. It is thought that
the contributing factors are the processes of smoking, curing, salting or adding
preservatives.

Meat is often cooked using very high temperatures during the frying, grilling,
broiling, barbecuing and charbroiling. These methods of processing and
preparation may affect the chemical composition as well as the nutritional value of
animal foods.
Protein comes from the Greek word ‘proteios’, which means ‘first’ or ‘foremost’,
reflecting the crucial importance protein has in proper cell function. But here’s the
thing: all protein is made by plants…consider elephants, horses, oxen, giraffes…all
chowing on live plants with none of the diseases or un-natural weight gain that
humans are presently struggling with.

Turns out eating a variety of high quality protein from plant sources throughout the
day may get the job done better then meat. It turns out that all that meat eating is
causing us harm in small and big ways.

While practicing detox cleansing no animal products are recommended. Protein is


obtain from plant sources like:

Nuts: almonds, brazil, pecans, pine nuts, cashews, walnuts, coconuts Veggies: dark
leafy greens, peppers, sea vegetables, shiitake mushrooms Fruits: apricots,
currents, raisins, prunes, dates, figs, avocados

> EATING A DIET LACKING IN FIBER: The American diet is dangerously low
in dietary fiber. Most people are consuming about 10 grams daily of this essential
ingredient to good health. The FDA, always a bit antiquated and behind the times
when it comes to up-to-date health information, suggests 20-30 grams of fiber. But
more modern health resources like Dr Joseph Mercola advise up to 50 grams of
fiber for every 1,000 calories of food consumed. How much fiber is too much?
According to our closest relative in Nature, the wild chimpanzees, who lives out
their lives with none of the diseases we are now struggling with, consume 300
grams of fiber per day. No hemorrhoids here. Let’s just say the natural world takes
whole food fiber seriously.

Eating fiberless foods day in and day out keeps us chronically constipated. There is
no fiber in meat and dairy, while cooked veggie food fiber is too soggy to sweep
the intestines clean. The main purpose of consuming fiber is elimination. Without
raw food fiber, complete elimination is nearly impossible. The human body is built
in such a miraculous way that almost all the toxins from every part of the body,
including millions of dead cells, end up in the colon ready for departure daily.
There are two main kinds of fiber: soluble and insoluble.

Soluble fiber is found in fruits like blueberries, cherries, and bananas. Seeds like
chia, flax and sunflowers. Vegetables like avocados, sea vegetables, cucumbers and
peas. Soluble digestive fiber dissolves foods into a gel-like texture. Under a
microscope soluble fiber looks like a sponge. Like a sponge it can absorb many
times more toxins than its own volume. It grabs up toxins and literally takes them
out of the body.

Insoluble fiber is found in foods like dark leafy greens, celery, beets, radish and
carrots. These foods are also known as ‘roughage’, with tough cell walls. They not
only add bulk to the stool but they act as ‘Natures Broom’, sweeping the intestines
clean of fungus and parasites. These foods are also known as ‘quick-exit’ foods.
This helps waste move through your digestive tract more quickly for daily
elimination.

> CHRONIC DEHYDRATION: Chances are that you're among the 90% of
Americans who are chronically dehydrated. The modern Western diet has
convinced the population that drinking soda, coffee, power drinks, and colored-
flavored water is the same as drinking fresh water. But you can’t fool Mother
Nature with substitutes. The majority of your body is made up of water. Every cell
and organ in your body needs water to work properly. Yet simply put, for some of
us, our bodies have been running on thirsty for years.

When we don’t drink enough water the body literally goes on drought
management, reserving just enough for energy to hold on, but not thrive. The
average adult loses about two and a half to 3 liters of fluid a day through sweating,
breathing, urinating, moving, even sleeping. The elimination system is dependent
on water to flush and drain toxins from the lymph system to the kidneys, on to the
colon and then out of the body. If the body is chronically dehydrated, the lymph
becomes thick and sluggish. Stool becomes dry and hard to pass. Toxins build up
throughout the body, causing havoc. Inability to remove toxins from the lymph and
colon can contribute to cancer. Detox cleansing is a good time to commit to
creating a daily routine of drinking fresh water all day, everyday.

Next I want to introduce you to The Detox Renewal Practices. A daily list of foods
and lifestyle habits that you will want to incorporate into your healing journey to
give your body the best chance at success.
When fighting disease symptoms it is important to create a committed routine, a
plan of non-negotiable lifestyle practices, so that your body can recover it’s natural
rhythms.

All physical life is composed of the same elements, an integral wholism of parts
communicating together to make our life possible. To allow healing to take place it
is up to us to remove any obstacles that does not aid the process.

> PRACTICE ONE: LIVE FOOD CHLOROPHYLL


Foods rich in chlorophyll are highly exalted in the Food As Medicine Healing
System. Grasses are incredibly nutrient-dense, even more so than vegetables as a
general rule. Wheatgrass is a particularly good source of chlorophyll and has the
power to regenerate our bodies at the molecular and cellular level.
Wheatgrass can be traced back in time to Ancient Egypt over 5000 years ago.
Considered sacred, the young leafy blades of wheat were prized for their positive
effects on health and vitality.

Almost 2000 years ago, during the first century AD, the Essenes, a Jewish sect,
used wheatgrass as a healing food. From their holy book, 'The Gospel Of Peace', it
reads “We may eat also the tender blades of grass that the strength of the Earthly
Mother may enter into us. But chew well the blades, for the Son Of Man has teeth
unlike those of beasts, and only when we chew well the blades of grass can the
Angel of Water enter our Blood and give us strength. Eat then, son of light, of this
most perfect herb from the table of our Earthly mother, that your days may be long
upon the earth, for such finds favor in the Eyes of God.” The Essenes, who were
said to eat primarily live foods, were reported by anthropological historians to live
to an average of 120 years old.
In the 18th century, Captain James Cook introduced sprouting and wheatgrass to
the British Navy to provide vitamin C to prevent scurvy on long journeys, finding
the benefits far exceeded that of lemons.

Scientific discovery in America began with Dr Richard Willstatter's pioneering


work on natural substances, especially chlorophyll. He was honored in 1915 with
the Nobel Prize in Chemistry for discovering the link between the chlorophyll in
plants and the hemoglobin in our blood. Human blood is practically identical to
chlorophyll within 2% on the molecular level. The only difference is that the
central element in chlorophyll is magnesium and in hemoglobin it is iron. This
discovery introduced the concept that the body could easily recognize chlorophyll
and put it quickly to work healing.

In 1931, biochemist Dr Otto Warburg, a leading cell biologist, won the Nobel Prize
for suggesting that cancer cells “live in hypoxic and acidic conditions”. From this,
he theorized that these low-oxygen and highly-acidic conditions can cause cancer.
In his work 'The Metabolism Of Tumors', Warburg demonstrated that all forms of
cancer are characterized by two basic conditions: acidosis (an acidic inner
environment) and hypoxia (a lack of oxygen within the system). Dr Warburg
discovered that cancer cells are anaerobic (do not breath oxygen) and cannot
survive in the presence of high levels of oxygen, as is found in an alkaline state.
Lack of oxygen and acidosis are two sides of the same coin: where you have one,
you have the other. All normal cells have an absolute requirement for oxygen but
cancer cells can live without oxygen....a rule without exception.

Live green food chlorophyll is one of our best friends when making health
changes. It is known that chlorophyll strengthens the cells, detoxifies the liver and
can chemically neutralize polluting elements in the bloodstream. But one of the
most important functions of chlorophyll is to provide oxygenation to the blood
stream. This essential element of disease prevention can only be found in raw fresh
leafy greens and wheat grass juice. When foods rich in chlorophyll are cooked or
processed, they lose this magical ingredient because oxygen is lost in the cooking
process in the form of steam. To offer the body a continual and abundant supply of
oxygen, in the Food As Medicine Healing System we consume chlorophyll rich
fresh greens daily.

Chlorophyll is created in plants as a result of the conversion of sunlight. When we


eat live fresh greens or wheatgrass, that vital energy is taken in by us. Because
Chlorophyll is almost identical to hemoglobin this close relationship in structure
makes chlorophyll easily recognized by the body and instantly usable. When we
eat fresh green chlorophyll foods, we oxygenate the blood which is delivered
through the capillary system to every cell in the body.

Presently the market is flooded with dried chlorophyll products to meet public
demand for a quick and easy fix. When foods rich in chlorophyll are processed,
they lose that magical ingredient, oxygen, which evaporates out in the drying
process.

Dr Ann Wigmore also known as the 'Wheatgrass Lady’, invented a way to grow
wheatgrass 'flats' from sprouted red winter wheat all year long indoors. In this way
anyone can consume fresh wheatgrass within minutes of juicing when it is in its
most potent form. This is called 'source to stomach'. Wheatgrass juice is a potent
medicinal. Consuming it should start off slowly so that the body does not detox too
quickly. We suggest 1⁄4 ounce mixed with organic fresh veggie juice and work up
to 1 ounce over time.

barometers, balance is everything. Proper pH (acid/alkaline balance) must be
slightly alkaline, at 7.0, but varies throughout the body for many reasons
For example, your bowel, skin and vagina should be slightly acidic...this keeps
unfriendly bacteria in check. Saliva is more alkaline, while your stomach is very
acidic. The stomach creates acid on an as-needed basis for digestion and to kill
bacteria. Once the food is ready to leave the stomach, the pancreas secretes sodium
bicarbonate that is distributed into the bloodstream for the next 2 hours to create an
alkaline terrain for the blood and organs. This is called the ‘alkaline tide’.

If we consume a diet high in acidic foods daily, it exhausts and weakens the
pancreas and the body remains chronically acidic.

The truth of who discovered fermented foods is not truly know. But it is women
who have always been kitchen healers, interconnected with life forces of the world
around us. We are keepers and providers of traditional knowledge. We are
fascinated by the intimacy of learning from each other and passing on experiences
from mother to daughter, neighbor to neighbor. When women crated a batch of
fermented foods, they learned they could save the ‘starter’, also called “the
mother” and pass it on to their daughters. You might say that through oral tradition
we women have always known that fermentation increases the health value of our
food.
When women left home to start new families, they often left to live new lives in
new lands. It would be their job ‘to keep bubbling fermentation cultures alive’ until
it reached its destination. Precious life cultures have traveled on boats across
oceans, over mountains on horse and wagon, through deserts on camels, to the
ends of the earth.

Knowledge of proper preparation to transform foods with fermentation has been


part of female collective memory for over 10,000 years. We have been part of the
magic and power of fermentation for as long as we have been human. Creating
communities of healing microbes is our natural realm. This valuable home brewed
science has been protected and cherished by our female ancestors. We women are
the keepers of this memory of life.
The human body requires efficient digestion and proper elimination in order to
maintain well-being and optimal energy levels. While the process of fermenting
foods to preserve them, make them more digestible, more nutritious and helps
maintain a healthy colon is as old as humanity, as our food sources have become
more industrial, unfortunately live fermented foods have largely disappeared from
the Western diet. In our Food As Medicine Healing System we have brought back
this treasured way of consuming these health defining foods.

Avoiding Supplements, Keep It Natural: Advertising and popular media messages


have led us to believe that if we pop a probiotic pill daily all that ails us in the gut
will be solved. That the complex ecosystem of microscopic bacteria and yeast that
inhabit our intestine is as easy to solve as washing our hands or brushing our teeth.
Yet studies have shown that the typical commercial supplement only contains one
or two different species of microbes. Your gut, however is home to over 100
trillion microbes from over 1,000 different species. This means that a typical
supplement contains less than 1percent of the species needed for this rich, diverse,
complex ecosystem. Probiotic pills are really like a drop in the ocean. Most of the
beneficial critters we host in our gut can't even be grown in a lab.

Yet these single-cell microbial life forms are essential to life's processes, such as
proper digestion. These cultures digest foods into nutrients our body can easily
absorb as well as prevent overgrowth of bad bacteria in the gut that feed on the
nutrients and electron energy we should be getting when we ingest our food. These
microbial life forms also protect us from disease by sitting at receptor sites in the

Water is an essential element for all life. The body is composed of about 75%
water. Yet the body does not make water, it must come from outside the body and
be replenished daily.
The functions of bodily fluids include digestion, absorption, circulation, creation of
saliva, transportation of nutrients, and maintenance of body temperature.

Chronic dehydration can create damaging effects. When we don't drink enough
water the body literally goes on drought management. Simply put, some vital
organs struggle to run on thirsty for years.
The Body’s Many Cries For Water:

> Water lubricates the cartilage found in the joints and disks. Dehydration can lead
to joint pain.

> All fluids in the body are made up of water. Blood is 90% water. A lack of water
can cause blood to become thicker, making it difficult for this vital liquid to carry
nutrients to the cells.

> Water is needed in the processes of sweating and removal of urine and feces.
Dehydration leads to a dry, constipated colon that keeps the body from eliminating.
This can lead to toxic build up.

> Insufficient water can prevent the kidneys from flushing properly leading to uric
acid build up and kidney stones.

> Water cools the brain. Dehydration can effect brain structure and function,
creating fuzzy thinking, head aches and migraines.

contribute to a host of chronic aliments and diseases.

> Commit to drinking eight glasses of filtered water in 6 oz portions every half
hour, everyday. I know for some people this may be difficult. Many of us are not
attuned to our bodies thirst signals. If this is the case, you will have to make it into
a practice. Set up a timer on your phone and drink the water like a needed
medication. I have found I really appreciate using a stainless steel reusable straw.
You will have to experiment to see what is best for you.

PRACTICE FIVE: EMBARKING ON DETOXIFICATION


The word ‘toxin’ has its root in the Greek word ‘toxicon’, which means poison. A
toxin is any substance of chemical or organic nature foreign to the human body
which may eventually cause disease or harm. As well cancer cells put off a
tremendous amount of their own waste, adding to a high acidic level of caustic
debris circulating in the blood stream that needs to be continually flushed and
eliminated.

The first step in detoxification is keeping food consumption clean and simple while
consuming predominantly alkaline foods in their purest form: fresh, organic plant-
based and enzyme-rich. There is a lot liquid in a detox cleanse. Liquid disrupts
stagnation while the consumption of unpasteurized, fermented foods contribute to
colon repair. The gentle rhythm of cleansing is an empowering act that clears away
accumulated clutter. This allows the body to but all its concentration into
rebuilding the weakened immune system, fighting mutated cancer cells, repairing
damaged organs and rebuilding new cells at the DNA level.

DAILY DETOX RENEWAL PRACTICE:

> Set up your kitchen for a successful period of detoxification. Spend time getting
comfortable with preparing the foods.

NOTE: When chemical poisons buried in the fat over long periods of time are
stirred up, they are taken back into circulation for elimination through the kidneys,
colon, lungs and skin. Often this life time of accumulation creates an
uncomfortable experience for a short time known as a ‘healing crisis’. During the
initial cleansing period, you may experience headaches, stiffness, lethargy,
sluggishness and negative mood shifts. Flatulence, or gas, foul smelling stool, and
bad breath may appear. As debris is released and removed from the system, energy
levels may surge, but as soon as the blood and organs of elimination become
congested you may feel tired again. These fluctuations are a good indicator of the
cycle of detox the body passes through. It’s important to pay attention, set your
own pace, be gentle with yourself and let the body be your guide.

PRACTICE SIX: THE FOOD AS MEDICINE DETOX PLAN


Next I want to share with you the basic formate for a simple detox. The vegan raw
foods are prepared in nutrient dense combinations to provide nourishment for the
one trillion cells so that the body can cleanse, repair and rebuild from top to toe.

7:00 am: Drink one glass of warm filtered water with lemon (one glass equals 6
ounces)

7:30 am: Gentle rebounding, meditation and gratitude ritual.

8:00 am: Breakfast: Chia seed and fresh almond milk pudding and a cup of
decaffeinated tea

8:30 am: Drink one glass of filtered water

9:00 am: Drink 1/4 ounce of fresh wheatgrass juice in a pint jar of fresh pressed
vegetable juice

9:30 am: Drink one glass of filtered water

10:00 am: Drink one glass of watermelon rind juice, or fresh baby coconut water

10:30 am: Drink one glass of filtered water


11:00 am: A small handful of soaked Raw almonds for a snack

11:30 am: A glass of fresh pressed vegetable juice

12:00-1:00 pm: LUNCH

OPTION ONE: Large 'Made With Love Veggie Salad' consisting of romaine
lettuce hearts, micro greens, sprouts, green onion, tomatoes, red bell pepper, grated
beets, grated daikon radish, green onion, one tablespoons organic raw pine nuts,
topped with slivers of nori sea veggies. 1 cup of warm unpasteurized miso soup
OPTION TWO: Large 'Made With Love Veggie Salad', 1⁄2 stuffed avocado with
sunflower seed pate, 3 raw crackers with nut cheese. 1 cup of warm unpasteurized
miso soup

OPTION THREE: Large 'Made With Love Veggie Salad', two Romaine lettuce
heart leaves topped with sunflower seed pate, thin avocado slices and a dribble of
fresh lemon juice topped with kraut.

You can rotate these three lunches and add other raw and living foods when you
get comfortable with the daily rhythm. Salad can be topped with extra virgin olive
oil and lemon dressing.

1:30 pm: Drink one glass of filtered water

2:00 pm: Drink one glass of watermelon rind juice or water from a baby coconut

2:30 pm: Drink one glass of filtered water

3:00 pm: Drink a pint of fresh pressed vegetable juice

3:30 pm: Drink one glass of filtered water

4:00 pm: Drink one cup of decaffeinated tea and eat a handful of soaked raw
almonds

4:30 pm: Drink 1⁄4 ounce of wheatgrass juice in a pint jar of fresh pressed
vegetable juice

5:00-6:00 pm: SUPPER


The goal of an early light supper is to go to bed on an empty stomach so that the
body can work on cleansing and repair while you sleep.

OPTION ONE: One pint of green vegetable smoothie

OPTION TWO: Bowl of unpasteurized miso soup. Raw Crackers with vegan nut
cheese. Small salad.

OPTION THREE: Mixed leafy green salad with glass of fresh veggie juice

6:30 pm: Drink one glass of warm filtered water


7:00-8:00 pm: Unwind with light stretching, gentle rebounding, bathing,
meditation and gratitude ritual. 9:00 pm Retire for the night. Having trouble
sleeping, just concentrate on your breath.

NOTE: Wheatgrass is grown from the Red Wheat Berry, a special strain of wheat
that produces high concentrates of chlorophyll. The young plant contains no
gluten. One ounce of juice equals 2 pounds of greens nutritionally.

DAILY DETOX RENEWAL PRACTICE:

> 4-5 glasses fresh veggie juice


> 2 green salads always topped with sea veggies
> 1-2 servings of kraut
> Morning and evening gentle rebounding
> Water every day 24-7-365

NOTE: Raw Food is a great tool to help you feel great, have more energy, and
allow the body to heal naturally. But remember, it’s only a tool. Once you have
reached your health goals, you may want to transition to a diet of 80% raw foods
and 20% super healthy cooked foods. But remember to keep it organic, because the
intention is not to de-tox and then re-tox.

PRACTICE SEVEN: THE DETOX RECIPES

DAIRY-FREE ALMOND MYLK


All boxed almond milk in the health food store has been pasteurized at high heat so
that they can sit on the shelf for years. They often have hidden sugars, synthetic
vitamins and flavorings. The box may also list 'carrageenan' as an ingredient to
thicken the milk. This ubiquitous additive is heavily red-flagged for cancer.
Carrageenan has been found to cause ulcerations and cancers in the gastrointestinal
track. Avoid, avoid, avoid!!!

Homemade calcium-rich almond “mylk” is low in fat, contains no cholesterol and


is high in essential vitamins. Almonds are not a true nut but in fact, a fruit. They
are low in fat and totally alkaline, making them an anti-inflammatory whole food.
Raw almonds contain arginine, an amino acid that research shows inhibits tumor
growth.

RECIPE:
1 cup Raw Almonds soaked overnight
3 cups filtered Water

Soak almonds overnight. Drain the almonds and add to the VitaMix with one cup
of pure water. Blend on high till pulverized. Add the rest of the water and blend
again. Pour the mixture through the nut milk bag sitting in the 8 cup glass bowl.
Using one hand, squeeze as much nut milk out of the bag as possible. Drink some
right away. It tastes so fresh and clean. Store the rest in the refrigerator. It will last
three days. Or you can use the milk to make blender drinks, creamy salad
dressings, puddings and desserts.

NEW DAY CHIA ALMOND MYLK PUDDING


Start the day with my chia pudding with fresh almond mylk. Chia seeds are packed
with plant-based protein, calcium, Omega 3 fatty acids. They are gluten-free and
rich in antioxidants.

RECIPE:
1 Cup fresh Almond mylk
1⁄4 Cup Chia seeds
1 Teaspoon pure Vanilla extract
2 teaspoons Raw Agave nectar

Simply mix all the above ingredients together and store in a glass jar or bowl in the
refrigerator until it thickens. Eat with chopped almonds, berries or banana slices on
top.

LEARNING-TO-LOVE-WHEATGRASS JUICE
Earth's Best High-Vibrational Energy Drink: Wheatgrass juice is considered the
most nutrient-dense whole food on Planet Earth for healing. This life-healing drink
is a potent tonic, demanding that we use it with respect. No need to prove you're a
real cowgirl. This is not a gift you guzzle.

Start slow, with as a little as a 1⁄4 of an ounce and work up to a 1⁄2 ounce at your
own pace. If it's working well, increase your dose to a full ounce but no more. You
can drink it straight or add it to other fruit or vegetable juices. Here's my favorite
recipe:

RECIPE:
5 Peeled Carrots
1⁄2 Granny Smith green Apple
1⁄4 Stalk Celery
1⁄4 – 1⁄2 Head of Romaine Lettuce leaf hearts
4 Small Swiss Chard leaves
1 Thin slice of fresh Lemon
1⁄2 Ounce shot of Wheatgrass juice

Start by juicing your 1⁄2 ounce of Wheatgrass Juice first. Take hold of the
wheatgrass with one hand and, with your scissors, cut off close to the root. Feed it
through the juicer. Pour the pure juice into a glass and set aside.

Juice the remaining ingredients and pour into a large glass. Add the shot of
wheatgrass. Wheatgrass juice is best within ten minutes, so drink right away.

GLUTEN-FREE BREADS and CRACKERS:


In the Food As Medicine Healing System we make living food crackers and breads
from pure, plant- based foods. We make our own wholesome flours from fresh
protein-rich, gluten-free flax seeds, almond meal, coconut flour, sunflower seeds
and kasha.

Kasha, also known as Buckwheat Groats, are actually edible flower seeds related
to the rhubarb and sorrel family. This highly nutritious seed contains no gluten or
wheat, is low in calories and high in essential vitamins. It also contains all eight
amino acids, the building blocks of protein.
Making dehydrated breads, crackers and cookies from pure, plant-based foods is a
game changer in the diet. These foods are light, yet filling. They provide a full
spectrum of vitamins and minerals, with wonderful texture.

RAW CARROT-GARLIC CRACKERS


TOOLS:

RECIPE:
3⁄4 cup Buckwheat Groats, soaked overnight in a Ball Jar
1⁄2 cup Flaxseed flour 6 cloves Garlic
1⁄4 slice White Onion 1⁄2 cup Carrot pulp
1 cup Carrot juice or water 1 teaspoon Sea Salt

Use a small electric coffee bean grinder as your designated 'dry ingredients'
processor to grind 1⁄2 cup of flaxseeds into flour. Then juice 1 cup of carrot juice
and save the pulp. Drain the soaked buckwheat groats in a small berry colander.
Feed them through your Omega Juicer with the blank attachment on, collecting in
a large glass bowl. Add the carrot juice as you go. Feed the onion and garlic
through the juicer. Next, mix in the carrot pulp, sea salt and flaxseed flour. Add
more liquid if needed. Form the batter into cracker shapes on the nonstick
dehydrator sheets. Dehydrate at 115 degrees for 12 hours. If the center is still a
little damp, flip the cracker over and dry for another 1⁄2 hour. Store in a glass jar in
the refrigerator.

MANY MIRACLES MISO SOUP


If you have lived most of your adult life in complete neglect of your colon, as I did,
you know you've got some healing to do. It will take some time and patience for
this vital organ to catch up. At first, a fiber-dense diet may cause gas and bloating
while your body builds up a strong flora colony to support a healthy digestive tract.
I do not know of a more healing food for the challenge than Miso Soup. In the
Food As Medicine Healing System we only consume unpasteurized Miso, with the
soup prepared at temperatures no higher than 118 degrees to make sure all the
friendly bacteria is kept intact.

RECIPE:
2 cups filtered water
1 Tablespoon Raw Unpasteurized White or Red Miso
1 Clove of freshly pressed Garlic
1/4 Rapunzel Vegan Bouillon Cube
1 Teaspoon fresh Lemon juice
1 Teaspoon Dulse Seaweed

Using your VitaMix blender, add 1⁄2 cup of filtered water to the Miso and blend
well. Add the rest of the ingredients and blend on high for about four minutes,
allowing the liquid to be warmed by the high speed of the blender. Warm a soup
bowl under hot water, then pour your soup mixture in right away. Top with a
teaspoon of Dulse seaweed. Drink right away while warm. If you have leftover
soup, you can store it in a glass jar overnight for the next day. Remember to barely
re-warm it to keep the enzymes intact.

RAW FERMENTED VEGAN NUT CHEESE


This wonderful food is made with Raw nuts and live unpasteurized Miso.
Fermented foods have the ability to supercharge the immune process, increase
nutrient absorption, protect the stomach from pathogenic microbes and normalize
the digestive system.

Raw Vegan Cheeses cannot be confused with processed vegan cheeses that are
'cheese like'. Processed vegan cheeses contain hydrogenated oils, protein isolates,
random hydrocolloids and preservatives. They are scary products, not marketed
with our health in mind.

Our wonderful, hand-crafted nut cheeses are made with a variety of nuts, such as
cashews, almonds, macadamias or pecans, and divine, live, unpasteurized Miso.
Nut and seed cheeses have astonishing nutritional benefits and zero cholesterol.
They are considered the perfect food for increasing joint flexibility, improving
memory, lowering blood pressure and protecting us from heart disease and cancer.

1 Cup Cashews soaked overnight 1 Tablespoon Miso
1 Pinch of Sea Salt
1 Teaspoon Coconut oil
1⁄2 Cup Water
2 Cloves fresh Garlic, pressed

Drain the cashews and add to the VitaMix with all the above ingredients. Start the
blender on low and work up to high to create a creamy texture. Add an extra
tablespoon of liquid if needed. Continue until a smooth consistency has been
achieved. Leave the cheese sitting at room temperature for about an hour so the
flavors can mingle. Perfect on our 'Raw Carrot-Garlic Crackers'. Store the rest in
the refrigerator in a glass container for up to a week.

SUNFLOWER SEED PATE


The simple Sunflower Seed is a powerhouse of alkaline protein and calcium. I love
this pate because it is thick and creamy, while the Red Pepper Miso gives it the
perfect complex taste. Wrapping it in a Romaine lettuce leaf allows you to bypass
the bread. I don't know if I could have made it through my own healing journey
without this rich, creamy, plant-based dish. High in anti-inflammatory protein and
calcium, it makes the perfect lunch food.

RECIPE:
1 Cup Sunflower Seeds, soaked overnight
3 Cloves pressed Garlic
1 Tablespoon Red Pepper Miso
3 Tablespoons cold pressed organic extra-virgin Olive Oil
1 Tablespoon fresh Lemon juice
1 Teaspoon dried Red Pepper flakes (optional)

Drain the Sunflower Seeds and add to the food processor with the olive oil and
Lemon Juice. Pulse the mixture until creamy. Add Miso, Garlic, and Red Pepper,
pulse again until everything is well incorporated. Using organic Romaine Lettuce
leaf hearts as wraps, fill with the pate. Top with ripe Avocado slices.
END-OF-THE-DAY GREEN BLENDER DRINK
Many of us may believe that we need to drink our blender drink in the morning.
The timeless wisdom of Ayurvedic Science says that midnight is the most precious
time for healing the organs of the body. You do not want to miss this opportunity.
Choose to drink a blender drink in the evening to support colon health and sleep
soundly without a lot of solid food for the system to contend with. This way, the
body can better concentrate on beating disease.
I drank this Smoothie every night for a year while I was healing. You may switch
out the baby spinach for romaine lettuce.

1 Ripe Banana
1⁄2 Cup frozen or fresh Strawberries
1 Handful of fresh Baby Spinach
3⁄4 Cup fresh Almond Mylk

Simply put everything into a high powdered blender. Blend on high until
everything is creamy. Enjoy!

WATERMELON RIND JUICE


This is the white flesh of the peel where the highest concentration of nutrients are.
This alkaline water shifts the highly acidic condition so many of us suffer from.
Drinking this water daily will alkalize the blood and reverse inflammation.

RECIPE:
1⁄2 Cup Watermelon rind (the white of the rind, minus the outer green skin)
1 Pint filtered water

Simply put everything into a high-powered blender. Blend until emulsified. Drink
over the next hour.

DAILY RENEWAL PRACTICE:


> The above recipes have been tried out on 100’s of students that have attended
Diet For Living School. They have always gotten the thumbs up for delicious. All
our students have had different levels of skills in the kitchen. What they all shared
was a desire to learn to make foods that allowed healing to take place. Commit to
at least 30 days of detoxification so that your body can have a fair chance of
creating change. Once you get comfortable you will know where you want to go
from there.

PRACTICE EIGHT: THE ROYAL FLUSH


COLON HYDROTHERAPY

Constipation is perhaps the best known and most widespread cause of toxic build-
up in the body. I know personally because it was my constant situation for years. I
had tried recommended pills and potions, but nothing worked until I better
understood how my body worked, and what it truly needed. Before this wisdom
reached me I had contracted cancer.

Constipation occurs when stool sits too long in the colon, becoming dry and hard
to pass. This build-up interferes with final absorption and digestion. While sitting
in the digestive tract, fats turn rancid, carbohydrates ferment and protein foods
putrefy, causing symptoms such as gas, bloating and halitosis. When the colon is
not working as nature intended, the other elimination systems begin to backup. As
debris collects in the colon, harmful bacteria run rampant, trillions of cells
throughout the body accumulate waste to capacity and over load organs stop
working properly. This leaves the body open to a host of diseases.

A healthy well-functioning bowel is essential for the maintenance of optimal


health. If the colon itself is not cleansed “all the most wonderful nutrition in the
world will not restore order” says my mentor Dr Ann Wigmore. .

Anyone seeking to enhance their ability to heal will find bi-weekly colonics a great
complementary therapy for aiding in the detoxification process. Colon
Hydrotherapy involves a safe, gentle infusion of water into the colon via the
rectum by a Certified Colon Hydro- Therapist. No chemicals or drugs are involved
and the entire therapy is both relaxing and effective. A highly competent certified
Colon Hydrotherapist uses warm water to hydrate the colon, soften the stool and
allows the process of eliminating hardened matter.

A continued course of hydrotherapy treatments will aid the body in expelling


toxins from all the elimination centers over time. As the colon begins to heal, the
body will once again be able to absorb essential vitamins and nutrients and work at
repairing the intestinal flora. This is the Divines grand plan. All we need to do is
cooperate.

PRACTICE NINE: REBOUNDING


One of the major cleansing systems, our lymph vessels are a web of very thin tubes
that lay just beneath the surface of the skin. Lymph paths travel to lymph nodes.
The lymph system has about 600-700 of these nodes concentrated in the neck,
armpits, around the heart, lungs and intestines. Clusters of lymph nodes protect a
particular area of your body. For example: neck nodes protect the head and brain,
nodes under your arm pits protect the breasts, nodes at the top of your thighs
protect the legs and genitals. Their job is to defend you from disease by destroying
pathogens, as well as removal of dead blood cells and cancer cells.

Unlike the arterial blood system, the lymphatic system has no pump of its own.
The lymph is totally dependent on physical activity to move. With out daily
movement the lymph will become sluggish, trapped and toxic.

One of the best exercises is gentle rebounding to encourage the lymph to move
through the pathways on its way to the intestines where spent lymph can be
eliminated. The use of a simple rebounder will help this vital elimination system.
The rebounding motion stimulates all internal organs and does wonders for the
intestines. Rebounding provides a stimulus for a free flowing system that drains
away wastes.

Jumping on a rebounder is remarkably gentle on the joints. Unlike a large


trampoline, the rebounding action is not intended to see how high you can jump.
The action is more gentle, like adding a little bounce to your step. Done in this
way, rebounding is safe for everyone. Five minutes is a long enough time to reap
many of the benefits. In time you may find you can bounce a while longer.
If you are not well or balance is an issue, you may want to sit on your rebounder
and bounce on your butt. Only start with two minutes of rebounding and slowly
work up to more. Allow your body to catch up in time with your heads desires. The
goal is always to stay in touch with your own body and its needs.

REBOUNDING HELPS:

There are many brands of rebounders. Making a purchase decision will depend on
what you want to spend. We like the Bellicon Rebounder or the Jump Sport made
with bungie cords that make the bouncing gentle on the knees and joints.
TIP: For stability, purchase one with a balance bar.

PRACTICE TEN: SUPER FOOD SUPPLEMENTATION
A serious health diagnosis is scary. It turns one's life upside down. Too often the
first response is to run out and purchase a wealth of synthetic over-the-counter
supplements. These products can add to your toxic load and contribute to the
body's acidic terrain because of all the dangerous chemical fillers and binders used
to make the pills are acidic and toxic.

It is estimated that at least 90% of all vitamin supplements contain ingredients that
are nothing more than manufactured chemical fillers. Just as processed foods are
loaded with additives and fillers, so are most vitamins. Some of the most common
additives are magnesium stearate, silicon dioxide, titanium dioxide, microcystalline
cellulose, steric acid, talc, simethicone and propylene glycol. You will find these
'other ingredients' at the bottom of the 'nutritional panel' on the back of the
supplement bottle, sometimes only listed as 'inactive ingredients'.

In many cases your vitamin and mineral levels in the body may have been depleted
for years. Yet even a healthy body does not have the ability to absorb and utilize

PRACTICE ELEVEN: EMOTIONAL CLEANSING


There is another component to detoxification. When working on restoring the body
to full health, it is important to remember we are more than just a physical,
chemical body. You cannot attain true health unless we visualize our body as a
whole community of equal parts working and communicating together.

The foundation of detoxing is releasing that which no longer serves. This includes
deeply buried negative emotions that have been carried and suppressed for years.
As we work to cleanse and clear away old toxic hurts and wounds it opens us up to
the next level of healing. Opening up a dialogue within one's self with no
constraints is a great tool to begin the process of renewal.

JOURNALING

There is no perfect way to journal. All that is needed is a pen and paper or laptop
and time set aside in a safe space. Write uncensored, if only for five or ten minutes.
There may be a lot on your mind or you may feel blank. On these days, give
yourselves permission to do nothing. On the days when you have a lot to get off
your chest feel free to write for hours. This may be a time when things buried deep
inside begin to surface. You may need a good cry. Whatever the experience, it is
your own individual process, belonging to you alone. Practice being gentle with
yourself. Talk to the God you believe in. Unload your burdens. If not today then
somewhere down the road.

Note: If the emotions seem more overwhelming than you can handle, consider
creating a relationship with a support group, therapist or clergy in tandem with the
journal work.
DAILY DETOX RENEWAL PRACTICE:

> Set a time aside that you can call your own. Meditate, reflect and write.
CHAPTER FIVE: WRAPPING IT UP
