Heat Coagulation Time (HCT)

Requirements:

Pyrex tube, oil bath and Milk sample.

Procedure:

 Take 10 ml of milk sample in pyrex tube.

 Set temperature of oil bath at 140 0C.
 Heat it until coagulation starts (the time period from putting it on heat till coagulation is
called heat coagulation time)
 By considering this time, we can check the thermal stability of milk and make decision
that milk is suitable for making desire product or not.
