Open food should be stored in food grade or food safe containers.

All food must be covered with an impervious film or lid.

Prepared food should be date marked to ensure good rotation.

Shelving is required to be 150mm off the ground floor to facilitate cleaning and to protect food
from contamination. No food or drink products including large plastic containers containing food or
drink products are to be stored on the ground.
