Paksiw na Bilong Bilong

INGREDIENTS   
2 lbs moon fish (hiwas or bilong bilong) cleaned well
2 thumb size ginger cut into strips
6 cloves garlic sliced
2 medium onion sliced
1 tsp peppercorns
3/4 cup vinegar
1 tbsp soy sauce
1/3 cup water
salt to taste
2 tbsp olive oil or regular oil
3 pieces finger chilies cut diagonally

INSTRUCTIONS  
1. Arrange ginger and half of the garlic in a wide pan. Add fish, peppercorns, the rest of the garlic, salt to taste,
vinegar and water. Allow to boil for few minutes then cover the pan. Cook for about 5 minutes.
2. Add soy sauce and onions. Drizzle with olive oil and top with finger chilies. Reduce heat to medium and cover
the pan. Simmer for additional 3-5 minutes or until fish is fully cooked and the sauce is reduced.
3. Serve for breakfast with garlic fried rice or serve as a side dish with steamed rice. Enjoy!
