easy to prepare and funto eat. Even a nine-year-old
canmakethem!
Serves 4
1 cup vegetable oil
12 corn tortillas, homemade (see page 4) or store-bought
Wh cups shredded cooked chicken
1; cups Guacamole (see page 47)
% cup sour cream
1. Heatthe ol in a large skillet over medium-high heat until hot. One at atime, dip the tortillas
into the hot oil to soften them, just a few seconds. Transfer to paper towels to drain.
2. Put2tablespoons of the chicken on each tortilla, top each with a heaping tablespoon ofthe
quacamole, and roll up. Place 3 tacos on each plate and top with the sour cream.
