SWEET PLANTAIN

Ingredients
1/2 cup of sugar
3 tablespoons of coconut powder
3/4 water for boiling your plantain
1/4 teaspoon cardamom powder
1 and ¾ cups of water
1 tablespoon custard powder
1/4 cup of raisins

Method:
1. Peel and cut the plantains in the middle as halves, then slice them in the centre to make 4
quarters from 1 plantain
2. Remove the centre seeds
3. line up the plantain skin first and then place plantains on top.
4. Add 1 and ¾ cups of water, ½ a cup of sugar, and cardamom powder and cover the pot.
Simmer until they are very tender for 10 minutes.
5. Meanwhile prepare custard sauce, put water in another pot and stir in the custard powder
straight away. Stir constantly to avoid lumps. Once you have a smooth and beautiful custard
sauce then stir in coconut powder. Keep on stirring until the coconut powder is well mixed and
no lumps in the pot.
6. At this stage is when you are adding coconut plus custard in a plantain pot.
7. Add in more coconut, raisins and custard sauce we cooked beforehand and simmer again on
low heat.
8. Turn off the heat and let the plantains cool slightly.
