Stuffed pumpkins

 1 lb ground pork (or meatloaf mix if pork isn’t available, but it will be a little heavier)
 one box of cornbread stuffing,
 one pie pumpkin (not a carving pumpkin – they are much smaller)

Cut the top off pumpkin and clean out seeds and stuff like you would a jack-o-lantern.
Brown meat in a pan and set aside.
Prepare cornbread stuffing as per directions on the box.
Mix cooked meat and stuffing together and place inside pumpkin.
Place pumpkin in something to catch drippings (baking pan) .
Cook at 350 for approx. 2 hours or until pumpkin is tender.

You can serve it as is, in the pumpkin, or scoop out the pumpkin meat and filling and place in a
big serving bowl; soup or both would complement it.
