DO NOT USE PRODUCT AFTER 4 HOURS USE Tomato - Ambient Procedure Key Standard Transfer sliced Tomato's into a NEW clean sanitised insert and place 24 hour prep label on, keep in chiller between 1 - 4 Prep degrees until required. Follow existing procedures to seal the rest of the ingredients and place back into chiller.
Pull Tomato's insert(s) from chiller and immediately
put Ambient Tomato's label on. The prep label also Pull must remain on the insert. Place underboard (eg Shelf beneath sandwich board) for 1 hour.
Allow Tomato to Warm Up for one hour in
Warm order to reach ambient temperature of Up between 18 - 29 degrees Celsius.
On After 1 hour Warm Up, Tomato can now be
board placed on board for 3 hours use.
When Tomato has 1 hour remaining on board,
Prep more lettuce should be pulled for changeover.
After 3 hours on board the Tomato's must be discarded
immediately. Note: If the 24 hour prep label expiries before the Discard ambient label, the product must be discarded immediately. Inserts must be washed, rinsed, sanitized, air dried after each use.
