HIPPOCRATES HAS BEEN MY INSPIRATION IN PURSUING THE PATH OF FOOD
SCIENCE. I HAVE ALWAYS FASCINATED ABOUT THE PROCESSES THAT GOES
INTO FOODS WE CONSUME ON THE DAILY BASIS AND HOW SOME FOOD WE
CONSUME COULD STRENGTHEN OUR SYSTEMS AND OTHERS MAKE US FALL
SICK. THE AVAILABILITY OF FOOD IN TERMS OF QUANTITY AND QUALITY
FORMS A KEY ROLE IN THE GROWTH AND DEVELOPMENT OF A COUNTRY
THUS ITS QUALITY AND SAFETY IS RELEVANT IN MY PURSUE OF MASTERS IN
FOOD QUALITY MANAGEMENT SYSTEM TO HELP BOOST MY KNOWLEDGE
AND CONTRIBUTE TO MY COUNTRY.

DURING MY UNDERGRADUATE STUDIES, I TOOK MORE INTEREST IN THE


PRACTICALITIES OF FOOD PROCESSING AND ANALYSIS. THIS BROUGHT ME
TO THE POSITION I CURRENTLY OCCUPY IN MY WORK ESTABLISHMENT AS A
SENIOR RESEARCH ASSISTANT AND FOOD PRODUCTION TECHNOLOGIST.
DURING MY NATIONAL SERVICE DAYS, I WORKED ON A PROJECT ON
COLLATION COMPILATION OF NEW FOODS INTO THE FOOD COMPOSITION
TABLE FOR WESTERN AFRICAN AND ALSO A FOOD DATA ANAYLSIS ON
INDEGINOUS FOODS IN THE NORTHERN SECTOR OF GHANA. THIS PROJECT
EXPOSED ME TO THE VARIOUS KINDS OF FOODS AVAILABLE IN GHANA AND
THEIR NUTRITIONAL COMPOSITION RELATED TO IT. HAVING GAINED
EXPERIENCE ON THE FIELD OF RESEARCH OF FOOD, I FURTHER PROCEEDED
WITH MY TRANSFERABLE SKILLS TO DEVELOP A FOOD QUALITY MANUAL
FOR THE DAIRY UNIT OF THE LIVESTOCK AND POULTRY RESEARCH CENTRE
WHERE I WORK AS THE LEAD OF THE UNIT.

WORKING AS A RESEARCH ASSISTANT AND FOOD PRODUCTION


TECHNOLOGIST FOR THE PAST FOUR YEARS HAS BEEN A REWARDING
LEARNING EXPERIENCE WITH WHICH I HAVE ATTAINED A CONSIDERABLE
AMOUNT OF PRACTICAL KNOWLEDGE IN FOOD AND DAIRY PRODUCTION.
WITH THIS KNOWLEDGE AND SKILL I AM ABLE TO TRAIN STUDENTS AND
PROSPECTIVE INTERESTED DAIRY PROCESSORS IN THE GOOD
MANUFACTURING PRACTICES OF DAIRY PROCESSING.

I BELIEVE WITH ACQUIRING THE KNOWLEDGE FROM YOUR INSTITUTION,


AND FROM OTHER VIBRANT AND ENTHUSASITIC GRADUATE STUDENTS I
WILL BE ABLE TO IMPLEMENT IT ON THE FIELD AND ALSO TRANSFER IT TO
OTHERS IN THE BUSINESS TO HELP BOOST THE PROCESSING AND
CONSUMPTION OF SAFE AND GOOD QUALITY PRODUCTS ON THE GHANAIAN
MARKET.
