pressure technique during the years 2000 and 2020. To start, you can see the diagram is a bar chart,
it is used to compare the number of studies made for this technique during 2-time intervals and in
different sectors.

Now, let’s look at the left part of the diagram. Let’s look at the grey bar, the latter represents the
number of studies for the use of HPH in the food production. There were 8,599 studies between
2000-2009 and 33,479 between 2010-2020, an increase of 74.32%. We see other elements in the
process like enzyme inactivation, fibre extraction, protein extraction for example are also evoked on
the diagram. There has been a significant rise in the number of studies for all since 2010. On the
diagram, the greatest progression is on the study of HPH on bioactive compounds with a progression
of 89.06%.

Now let’s talk about the right part. This part of the diagram shows the number of studies for the use
of HPH in the use of several products. Indeed, the use of this technique continues to grow. There is a
65.99% increase in the number of HPH studies for milk-based product production. Technology is also
booming in other areas of production. Indeed, its use has spread in the production of fruit juice (its
number of studies has increased from 567 to 1863 in just 10 years). In other areas of production such
as the production of alcoholic beverages, the same phenomenon of development of the use of HPH is
observed. Over the years, this technology has seen its interest increase.
