Ingredients for 4 people:
400g cooked basmati rice
1 carrot
10 fresh or broad beans
100g cabbage
1 onion
1 clove of garlic
6 leaves of hikandhi fai
3 eggs 160g tuna in oil
soy sauce
chilli pepper
salt and pepper
Sauté the finely chopped onion with the garlic and the
hikandhi fai leaves for a few minutes; add the beans,
carrot and the cabbage sliced thinly and allow to simmer
for about 20-25 minutes After turning off the hob, add the
tuna, the beaten eggs and soy sauce as you wish. Adjust
with salt and pepper and combine the previously cooked
basmati rice.

Fish curry is one of the most traditional of Maldivian
dishes, In the Maldives it is eaten with white rice and can
be prepared with all kinds of fish, depending on what is
being caught daily.
Ingredients for 4/6 people:
400g of diced fish 1 piece of ramba faiy
2 onions 1 teaspoon tomato purée
2 cloves of garlic 400 ml of coconut milk
5 leaves of hikandhi fai 1 tablespoon curry powder
a piece of fresh ginger salt and pepper
Cut the onion into thin slices, add the garlic, hikandhi fai leaves and the
ramba faiy leaf, the ginger and a with a drop of oil for seasoning and cook the
vegetables for ten minutes; season with salt and pepper.
Add the curry powder and allow for its fragrance to be given off: afterwards,
add the tomato purée, stir and pour the coconut milk: raise the heat and stir
carefully, curdle the sauce slightly. Finally add the diced fish and cook for a few
