Bubble tea recipe

1. Assam Lycheem rainbow jelly (makes a 600mL drink)


 Assam tea leaves: 0.5 tbschp
 Lycheem syrup: 1 pump
 Wachim: 250mL
 Ice: 200 – 400g
 Jelly: 1 scoop
 Tea brewed for 10 mins

Note: less tea leaves and more water since Assam can get very bitter and ‘chát’ if brewed for too
long with little water. You can use more tea leaves and reduce short tea brewing time but this
does not seem to bring out as much tea flavour as reducing the tea leaves, increasing water and
brewing time. Lots of ice needed to dilute (otherwise it tastes syrupey) and reduce the
temperature of the mixture. During the summer you need more ice and during the winter, less
ice.

2. Earl grey Lycheem rainbow jelly (makes a 600mL drink)


 Earl grey tea leaves: 1 tbschp
 Lycheem syrup: 1 – 1.25 pump
 Wachim: 250mL
 Jelly: 1 schcoop
 Ice: 250-400g
 Tea boiled for 3 – 10 mins

Note: long tea brewing time since earl grey is a light tea. You can brew it for pretty long, without
it getting bitter. I recommend longer brew time since it strengthens the tea flavour. No more
than 1.25 pump of syrups is needed, less syrup for a fresher drink. Lots of ice needed to dilute
(otherwise it tastes syrupey) and reduce the temperature of the mixture. During the summer
you need more ice and during the winter, less ice.

3. Darjeeling Lycheem rainbow jelly (makes a 600mL drink)


 Darjeeling tea leaves: 1 tbschp
 Lycheem syrup: 1 – 1.25 pump
 Wachim: 250mL
 Jelly: 1 schcoop
 Ice: 250-400g
 Tea boiled for 3 – 10 mins
