I wanted to know how | could Become a chef of such incredible calibre, That became one ofthe main rivers for me to workin food, DREAMS DEFERRED ‘After | graduated fram high school, my parents wouldn't let me pursue my dreams in food. Working in hospitality themselves, they knew the struggles af the industry and Aidit want me to go through the same hardship, So, they pushed me to pursue a degree (a i typical in many Asian families), but | wasn't smart enough to get into the degrees ‘that would make ther proud. Natural, rebelled against my parents’ wishes and tried to get. ajob in high-end restaurant. Even though | asked to be paid alow wage (or not stall) and offered to do the dishes, | wae rejected, | had no experience, but | was wilng to learn n the end, defeated, listened to my parents and pursued another field where could still work with food, but azo get myself into university. (1 actually had to doa diploma course before being admitted to a degree, but | falled twice.) studied nutrition but | dropped out inthe frst year because | was absolutely not dligent enough in studying. Iwas just obsessed with cooking. 'd watch Harvard University lectures on YouTube of chef talking about food! id spend hours writing recipes and testing new dishes. t was a passion that would not die During those years, Mum opened a pastry kitchen in ‘our home, sling toa café. I helped out by doing the washing, packing cakes, and doing deliveries. actualy wasn't a huge fan of baking cakes - the clasie sponge cake, black forest, or mud cake. | was more drawn to plated desserts where | ‘much flavour was on the plate and be more expressive in the presentation. id control and balance hove {also did volunteer work asa htchen hand ata café in Bronte every Saturday for three months, helping the chefs prep during the day and cleaning up the kitchen at night, until one day | was asked to help with service. | really enjoyed the art of plating the food and the joy of ‘watching beautiful food going out, Sut | couldn't aford to keep working for fee. remember | had just 10 dollars in my pocket and an overdrawn bank account. had to use the x0 dollars to put fuel in my ar 0 | could make it tomy university classes, | ended up getting 2 pad job in another café for afew months | would wake up ats:00 am every morning, chop 3 truckload of Fut, mash avocados, make brcher muesl, and plate fut salads forthe brealfast and lnch shift, wrapping Lup by 4:00 or 5:00 pm. But | had no joy it was just whatever job | could get to put petrolin the ear tobe able to drive to university, which was two hours away from home. DESTINY CALLS! Around the time | was given the opportunity of ifetime toappear asa contestant on MasterChef Australia 2035, | {dropped out of university. My gslfiend at the time, who | ‘was constantly trying to impress with food, had pushed me to apply for the competition, | wasn't keen, but | remember her saying, ‘Ifyou don't apply, going to apply for you: After leaving the competition in fourth place, my brothers, ry mum, and I joined forces to open KOI Dessert Bar and Monkey's Corner. And the rest s history. Inthe years since MesterChef, ve been grateful to beable to show the country andthe world my love of food and cooking. CHOCOLATE MOUSSE “This fufy, decadent mousse, paired with the crunchy delicacy of honeycomb, i everything you've ever wished for ~ chocolatey, sweet, and delicious. Serves 8 36m thickened cream eggs, yolk and egg whites separated 20g white sugar 225g dark chocolate \Whip the cream until medium peaks form, then store ‘tin the fiidge until needed. Combine the egg whites and half the sugarin a mixer and whisk until medium:to-stif peaks form. Meanwhile, melt the dark chocolate in heatprf bow! Inthe microwave or over a saucepan of simmering water 4 Combine the egg yolks andthe remaining sugar Jina heatproof bow! and whisk over a saucepan of simmering water until very Muffy, Once the mixture is lossy, slowly add the melted chocolate. (Don't worry ‘fit firms up and looks abit dry at this stage.) Remove the bowl rom the heat \Whiskin the meringue in three batches until the mixture {is well combined, smooth, and glossy. Using a rubber spatula, fold inthe whipped cream in three batches ‘until completely combined, G Pour the mousse into serving dishes r a container and put tin the ridge for about 45 minutes to set then enjoy! Serve with honeycomb (se recipe next page) if you lke. nN . . . ’ 60g caster sugar 60g liquid glucose 25g honey 758 bicarb soda Line a1 x30 x 8em cake tn with baking paper. Combine the sugat, glucose, and honey in a saucepan Cook over a medium heat unt the mixture reaches 256°C on a sugar thermometer. Remave the pan from the heat and quickly but carefully whisk in the bicarb soda as the mixture will bubble up very quickly. Innmediately pour the mixture into the tin, Allow the honeycomb to cool down and set for about 30 minutes Break the honeycomb into chunks and serve it on top of the mousse, You can als fold the honeycomb through ‘the mousse, tote ary left-over honeycomb in an airtight container for up to a week “Thy adding a teaspoon of ground cinnamon along withthe flour or top the batter with jst one or various fruits to form a gamish recommend enjoying these butter cakes while ‘eye sil slightly warm, with a hot cup of tea Serves 250g unsalted butter, softened og caster sugar 2008 selling four 2pinches of fine salt sags 285ml full-cream rile Yalemon, rated zest and juiced 20g honey, plus 50g fr brushing 2oml extra virgin olive oil Fut of your choice (se tp) eeeccecece Preheat the oven to 180°. Line five xocm spring-form cake tins with baking paper. 2 Putthe buster and sugarin an electric mixer fitted with the whisk attachment. Whisk on medium-high speed nti fy, about 5-8 minstes, Meanwhile, sift the flour and salt together ina separate bow 3. Once the butter mixture is Nuify, add the eggs, one ata time, and whisk untl combined. Add the milk, lemon zest, juice, honey and olive cil and whisk until completely incorporated. Add the sifted flour and slowly his until a batter is formed, {) Spoon g0g of the batter inta each cake tn, Arange thin slices or pieces of fruit on top. 5 Bake the cakes for35-40 minutes or untila skewer inserted into the centre ofeach one comes out clean, & Warm the honey inthe microwave for 10-20 seconds to loosen it. Drizzle each hot cake with some ofthe honey and use a pastry brush to brush it over the top ofthe cake, Allow the cakes to cool litle before removing them from the tins and brushing them with more honey. “TIP: Try using thinly iced or chopped apples, oranges, gs, ‘or berries ontop of the cakes. Ensue the fut isn't too bulky ‘ori il sink into the batter. You can also cook the batter in ‘one large cake tn. Increase the cooking time by about 15-30 ‘minutes, depending onthe size ofthe tin. Most people would think that getting ‘ejected would be the hardest part, but t's just what happens. You're not always the right person fr the role. You can take rejection personaly. My parents keep ‘me on track to balance school, ating, and just being aki!
