In ancient times it was a cemetery, later


during the period of the republic it was

celebration of civil and religious
activities.

This is a summary of the Inca

Many of the families of Abancay between


1850 and 1950 were Italians who left us
an exquisite culinary legacy. We
remember the Petriconi, Martinelli,
Dogliotti, Galimberti and others who
promoted Italian cuisine among the
population of Abancay.

Hi! We are Joe,Esteban and Bob and We are from Abancay. We are in the ________ grade and section
________.We love our city.We are very proud of our city. We are proud of nice food,like the tallarines de casa.
We are making this report to value and recognize our gastronomy, which makes us feel proud to be Abanquinos.

Many people visited Abancay and were surprised by an exquisite dish of Italian roots combined with techniques
of the typical dishes of Apurímac. We as Abanquinos are proud of the typical dishes like the tallarin de casa with
its attractive combinations. This traditional recipe that satisfies the palate of Abancay's diners is prepared in all
the restaurants and quintas. The tallarines de casa can be prepared instantly and gained popularity over the years.

BRIEF HISTORY: Well, the tradition of tallarines de casa dates back to April 28, 1858, the date on which Pope Pius
XII founded the new Diocese of Abancay, where the Italian friars used to make the noodles themselves. The people
from Abancay took their techniques and combined them with the typical dishes of Apurimac, resulting in one of
the main dishes and best known tourist attraction of the region of Apurimac: the tallarines de casa. We accompany
this pasta with guiso de gallina, rocoto relleno, chicharrones de chancho, kapchi de chuño.

HOW IS THE TALLARINES DE CASA MADE? This pasta is made of fortified wheat flour, farm eggs, salt and water,
based on the traditional recipe learned from Italian migrants who arrived in Apurimac in the 20th century. The
color of the dough is determined by the egg yolk.
