Instructions
2. Place a wax or baking paper to line the steamer, leave some vents on the sides (this prevents
fish from sticking) then place fish on top of it. Top fish with some ginger slices then steam for 10
minutes or until fish is cooked. Set it aside.
3. Combine all Light Soy Sauce ingredients in a saucepan, bring it to a boil then turn heat off.
4. Place fish in a deep dish then pour sauce over it, drizzle sesame oil on top then garnish with
Fried Garlic and Spring Onions.
Lemony Steamed Fish
3 pcs fillets
1 tablespoon onion powder
2 teaspoons parsley
¼ teaspoon paprika
1 pinch seasoned salt, or more to taste
1 pinch lemon pepper
1 pinch garlic powder
2 tablespoons lemon juice
Directions
Step 1
Preheat oven to 375 degrees F (190 degrees C).
Step 2
Cut foil squares large enough for each fillet.
Step 3
Center fillets on the foil squares and sprinkle each with onion powder, parsley, paprika, seasoned salt,
lemon pepper, and garlic powder. Sprinkle lemon juice over each fillet. Fold foil over fillets to make a
pocket and fold the edges to seal. Place sealed packets on a baking sheet.
Step 4
Bake in the preheated oven until fish flakes easily with a fork, about 30 minutes.
Fish Sticks with Tartar Dip

Part 1
1. Season dory fillets with rosemary, salt, pepper and lemon juice. Set aside for 15 minutes.
2. In a frying pan, heat oil then fry fish until golden brown.
3. Drain on paper towel and set aside.
Part 2
1. In a bowl, pour milk and cornstarch then stir until dissolved. Set aside.
Part 3
1. In a pan, heat oil and melt butter then saute onion until soft.
2. Add mushrooms then stir fry until light brown.
3. Pour milk mixture and bring to boil then season according to taste.
4. Simmer until begin to thickens. Keep stirring.
5. Add fried fish then simmer for another minute.
6. Transfer to serving plate then serve with steamed beans.
FISH FILLET IN SPICY MANGO SAUCE
Ingredients:
500 grams cream dory fillet, cut into serving pieces
cooking or vegetable oil for frying
ripe mango and green bell pepper strips for garnishing
Coating:
1 large egg, beaten
1/2 teaspoon salt
1/2 teaspoon ginger powder
1/2 cup cornstarch
1/4 cup water
Procedures:
Part 1
1. In a bowl, combine the cornstarch, egg, ginger powder, water, salt and fish fillet then stir to coat
evenly.
2. Let sit for 15 minutes at room temperature.
Part 2
1. In a frying pan, heat cooking oil and deep fry fish pieces for 3 minutes or until golden brown.
2. Drain on paper towel and set aside.
Part 3
1. For the sauce, In a sauce pan over medium heat, combine rum and mangoes then stir cook until the
sauce reduced.
2. Add honey, sugar and water then mash the mangoes until puree. Add chili flakes then adjust
sweetness according to taste.
3. Add dissolved cornstarch then keep stirring until the sauce thickens. Remove from heat.
Part 4.
1. In a serving plate, place fried fish fillet then add mango and bell pepper strips.
2. Pour the sauce on top, serve and enjoy.
CREAM DORY IN RED SAUCE
Ingredients:

1. Marinate fillet into ginger powder, salt, ground pepper and calamansi juice for 15 minutes. Drain.
Part 2
1. In a frying pan, heat oil then fry marinated fillet until light brown. Drain and set aside into serving
plate.
Part 3
1. In a sauce pan, heat oil then saute garlic, onion, and tomatoes until soft.
2. Add black olives, capers, chili flakes, tomato paste, and water. Stir and bring to boil.
3. Season with sugar, salt, and pepper to taste. Simmer until the sauce reduced.
4. Pour the sauce on top of fillet then garnish with spring onions. Serve with steamed rice.
Sweet and Sour Cream Dory
Ingredients:
250 grams cream dory fillet, cut into serving pieces
1 small green bell pepper, diced
1/2 cup pineapple chunks
1 onion, quartered
1 tablespoons ginger, julienned
3 cloves garlic, minced
salt to taste
cooking or vegetable oil for frying
1 small carrot, peeled and sliced diagonally(optional)
Coating:
1 large egg, beaten
1/4 teaspoon salt
1/4 teaspoon ginger powder
1/4 cup cornstarch
2T water
Procedures:
Part 1
1. In a bowl, combine the cornstarch, egg, ginger powder, water, salt and fish fillet then stir to coat
evenly.
2. Let sit for 15 minutes at room temperature.
Part 2
1. In a frying pan, heat cooking oil and deep fry fish pieces for 3 minutes or until golden brown.

Part 3
1. In a pan, heat oil and saute ginger, garlic, onion, bell peppers, pineapple chunks and carrots until
done. Remove and set aside.
Part 4
1. In a same pan, combine water, sugar, vinegar, pineapple juice, ketchup, soy sauce and sesame oil. Mix
well.
2. Let sauce boil over medium heat.
3. When boiling, add dissolved cornstarch and continue stirring until thickens. Adjust seasoning then
turn off the heat.
4. Put back fish fillet and veggies then mix.
5. Serve immediately
Cream Dory Teriyari
Ingredients:
2-3 pieces Cream Dory
3 tablespoons calamansi/lemon juice
salt and pepper to taste
toasted sesame seeds
spring onions
Teriyaki Sauce:
3 tablespoons worscetershire sauce
1 tablespoons oyster sauce
3 Tablespoon brown sugar
1/2 teaspoon paprika
1/2 teaspoon ginger powder/grated/juice
1/2 teaspoon oil
1/2 teaspoon cinnamon powder
Procedures:
Part 1
1. Marinate cream dory in calamansi juice for 30 minutes. Set aside.
2. In a bowl, combine teriyaki mixture then mix until blended.
Part 2
1. In a baking pan, lined with aluminum foil.
2. Season cream dory with salt and pepper then pour teriyaki sauce on top.
3. Bake in a preheated over 350 degrees Fahrenheit for 20 minutes or until cooked.
4. Transfer to serving plate then drizzle with teriyaki sauce.
5. Sprinkle with sesame seeds and spring onions. Serve.
