Glory Bowl

 4 cups cooked brown rice (short grain or pearl not long grain)
 1 cup beets, grated

 1 cup carrots, grated

 1 cup almonds, toasted (slivered almonds)

 1 cup spinach leaves

 1 cup tofu, cubed 9 or protein of your choice

 Glory Bowl Dressing

 ½ cup nutritional yeast flakes

 ⅓ cup water

 ⅓ cup tamari or soy sauce

 ⅓ cup apple cider vinegar

 2 cloves garlic, crushed

 1.5 cups vegetable oil

 2 tbsp tahini paste

 Prepare brown rice and set aside.

 In a skillet, sauté tofu cubes or your protein. Prepare dressing by combining all
ingredients in a blender.

 To assemble the bowls, place cooked brown rice into bowls and top with beets, carrots,
spinach, almonds and tofu or your protein. Drizzle with dressing.
