4 cups cooked brown rice (short grain or pearl not long grain)
1 cup beets, grated
⅓ cup water
In a skillet, sauté tofu cubes or your protein. Prepare dressing by combining all
ingredients in a blender.
To assemble the bowls, place cooked brown rice into bowls and top with beets, carrots,
spinach, almonds and tofu or your protein. Drizzle with dressing.
